Okay, so today I tried to get a taste of that famous Nola cuisine. I’ve always heard about how amazing the food is in New Orleans, so I figured I’d give it a shot myself.

First, I looked up some recipes. I wanted something that seemed iconic, but also something I thought I could actually pull off. I’m no chef, that’s for sure!

I decided to try making jambalaya. It looked like a good mix of everything – rice, meat, veggies, and that awesome Creole seasoning. I went to the grocery store and grabbed what I needed: chicken, sausage (andouille, of course!), rice, the “holy trinity” (that’s onions, celery, and bell peppers), and some canned tomatoes. Oh, and the spice blend! Can’t forget that.

Back home, I chopped up all the veggies. This took a while, I’m not gonna lie. My knife skills aren’t the best. Then, I browned the chicken and sausage in a big pot. I had to do it in batches so it wouldn’t get all steamed instead of browned. It Smelled good.

Next, I tossed in the veggies and let them soften up a bit. Then went the rice, tomatoes, and some chicken broth. The recipe I was following said to add the spices now, so I did. I also added some of that chicken and suasage that I browned before. It was starting to look like real jambalaya!

I brought it to a boil, then turned down the heat and let it simmer for, like, 25 minutes. The hardest part was waiting! I kept peeking under the lid, but I knew I shouldn’t. It was very hard to wait!

Finally, it was done! I fluffed it up with a fork and served myself a big bowl. It was much delicious and spicy! I am very satisfied.
