Okay, so I’ve been seeing these “cowboy meatloaf” recipes floating around, and I finally decided to give one a shot. I’m no chef, but I do like to mess around in the kitchen, so here’s how my little meatloaf adventure went down.
Gathering the Goods
First things first, I needed to get all the ingredients together. I grabbed:

- Ground beef – I went with a mix of lean and regular, figured it’d give it a bit more flavor.
- An onion – Chopped that sucker up real fine.
- Some bell peppers – Red and green, ’cause why not?
- Breadcrumbs – Just the regular kind, nothing fancy.
- An egg – To bind it all together, you know?
- Barbecue sauce – This is the “cowboy” part, I guess. I used my favorite, Sweet Baby Ray’s.
- Worcestershire sauce – Just a splash for some extra oomph.
- Garlic powder, onion powder, salt, pepper – The usual suspects.
- Shredded cheddar cheese – Because cheese makes everything better.
- Bacon– Cooked,crumbled
Mixing It All Up
I preheated my oven to 350°F (175°C).Then, I threw the ground beef into a big ol’ bowl. Added in the chopped onion, bell peppers, breadcrumbs, the egg, a good glug of barbecue sauce, that splash of Worcestershire, and all the * to mix them well.
Baking Time!
I put my loaf pan, and baked for about 50 minutes.
Glaze and Finish
Took the meatloaf out, spread on the remain BBQ sauce and then put it in the oven for 10 minutes.
The Verdict
I pulled that sucker out, and it was perfect! The cheese was all melty,and tasted delicious. It’s definitely a hearty, stick-to-your-ribs kind of * I make it again? You bet! It was pretty easy, and everyone loved it.
