They’re sourer than a granny’s lemon pie, but mix ’em up right, and they turn into a sweet-tart treat that’s just perfect for a pie. Let me tell ya, making a goumi berry pie ain’t all that hard, and I’ll walk ya through it like I would if we was sitting on the porch, swattin’ flies and sippin’ on sweet tea.

Ingredients:

  • 2 cups of goumi berries (fresh or frozen)
  • 3/4 cup of sugar (or more if you like it sweet, I won’t judge!)
  • 2 tablespoons of cornstarch
  • 1 tablespoon of lemon juice (fresh, if you got it from the tree)
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of ground cinnamon (optional, but it sure does add a nice touch)
  • 1 pre-made pie crust (unless you feel like makin’ your own, but I ain’t got the time for that!)
  • 1 egg white (to brush on top to keep that crust crispy)

Directions:

First things first, you gotta get your berries ready. Now, if you’re using fresh goumi berries, you just wash ’em good, get rid of any twigs or dirt, and pick out the ones that look good. If you’re using frozen ones, make sure they’re thawed and drained. Can’t have no watery mess in that pie!

Next, take a big ol’ bowl and mix your goumi berries with the sugar, cornstarch, lemon juice, vanilla, and cinnamon. Give it a good stir, and make sure them berries are all coated in that sugary goodness. The cornstarch will help thicken the juice when it bakes up, so you don’t end up with a runny pie. Trust me, nobody wants a soggy pie.

Now, you got your pie crust ready? If you bought it from the store, just unroll it and fit it into a pie pan. If you made it yourself, well, you’re fancy, and I’m impressed. But anyway, before you put the berry mix in, grab that egg white and beat it up a bit. Brush it over the crust. This little step helps keep your crust from getting all soggy when the berries start to cook. It forms a nice little barrier, and makes that crust crisp up real good.

Once you’ve brushed your egg white on, pour in your berry mixture. Spread it out nice and even so every bite has a good mix of sweet and tart. Just make it look nice enough that it’ll make folks hungry when they see it.

Now, pop that pie into a preheated oven at 375°F (190°C) and bake it for about 40-45 minutes. You’ll know it’s done when the filling starts to bubble up through the crust and that top gets all golden brown. Oh, it’ll smell so good, you’ll have the neighbors knockin’ on your door just to see what’s bakin’!

Once it’s done, let it cool down for a bit. You don’t want to burn your tongue tryin’ to eat it right away! But when you do slice it, you’ll see that gooey, sweet-tart filling oozing out, and you’ll know you done good. Serve it up with a scoop of vanilla ice cream or a dollop of whipped cream if you want to really spoil yourself!

Tips and Tricks:

  • If you don’t have enough goumi berries, you can mix ’em with other berries like blueberries or raspberries. That’ll give ya a nice twist, and still keep the flavor punchy.
  • If you like your pie sweeter, just add a little more sugar. It’s all about balance, ya know?
  • If you’re feelin’ fancy, sprinkle a little cinnamon sugar on top before you bake it. It’ll give the crust a sweet little crunch!
  • Don’t be shy about trying different crusts. A graham cracker crust would be mighty tasty, or a buttery shortbread one if you’re feelin’ extra special.
