Alright, listen up, y’all! I’m gonna tell ya how to make these here pumpkin spice cookies, and it ain’t gonna be fancy, ya hear? Just plain talkin’ like I always do. No need for big words or complicated stuff. We’re makin’ cookies, not rocket science!

Now, this here recipe is so dang easy, even my old dog could probably do it. You only need three things! Yep, you heard that right, three measly things! So don’t go frettin’ about havin’ to run to the store for a bunch of fancy ingredients.

  • First thing you gotta get is a box of spice cake mix. Any brand will do, just make sure it says “spice cake,” you got me?
  • Next up, you need a can of pumpkin puree. Don’t go gettin’ that pumpkin pie fillin’ stuff, that ain’t the same! Just plain ol’ pumpkin, alright?
  • Last but not least, you need some chocolate chips. Now, you can get fancy with the dark chocolate or the milk chocolate, but I just use whatever I got on hand. Heck, sometimes I even throw in some nuts too, if I’m feelin’ wild!

Okay, so now that you got your stuff all gathered up, let’s get to bakin’. First thing you gotta do is dump that spice cake mix into a big bowl. Yep, just dump it right in, don’t be shy! Then, you open up that can of pumpkin and plop the whole thing in there too. Don’t drain it or nothin’, just dump it right in with the cake mix.

Now comes the fun part! You gotta mix it all together. I just use a big spoon, nothin’ fancy. Just stir it around until it’s all mixed up good. It’ll be kinda thick and sticky, like playdough, but that’s how it’s supposed to be. If it’s too dry, you can add a little bit of water, just a tablespoon at a time, until it gets to the right consistency.

Once it’s all mixed up, you dump in them chocolate chips. Again, don’t be shy! The more the merrier, I always say. Stir them in good, so they’re spread out all over the dough. If you’re usin’ nuts, throw ’em in now too.

Now, you gotta get your bakin’ sheet ready. I just use a little bit of that spray stuff so the cookies don’t stick. Then, you take a spoon and scoop out little blobs of dough onto the bakin’ sheet. Don’t make ’em too big, or they won’t cook all the way through. Just little spoonfuls, about an inch apart, that’s all you need.

Alright, oven time! You gotta preheat your oven to 350 degrees. Once it’s hot, stick them cookies in there for about 12 to 15 minutes. Now, every oven is different, so you gotta keep an eye on ’em. You want them to be golden brown around the edges, but still soft in the middle. Don’t overcook ’em, or they’ll be hard as rocks!

Once they’re done, take ’em out of the oven and let ’em cool for a few minutes on the bakin’ sheet. Then, you can move ’em to a wire rack to cool completely. But let’s be honest, who can wait that long? I always sneak a couple when they’re still warm. They’re just so darn good!

And that’s it! See? I told ya it was easy! These pumpkin spice cookies are perfect for when you want a little somethin’ sweet, but you don’t wanna spend all day in the kitchen. They’re quick, they’re easy, and they’re dang delicious! So go on, give ’em a try. You won’t be sorry!

Now, a few little tips from an old gal who’s been bakin’ for a long time. If you want to make these cookies extra special, you can add a little bit of vanilla extract to the dough. Just a teaspoon or so will do the trick. And if you want to get really fancy, you can drizzle some melted chocolate over the top after they’re cooled. But honestly, they’re pretty darn good just the way they are.

And that’s all there is to it, folks! Now you can make these simple, tasty pumpkin spice cookies any darn time you want. Enjoy!
