Alright, so I had these beef tips in the fridge, and I’m thinking, what the heck am I gonna do with them? I wanted a solid meal, not just some snacky stuff. Beef and rice? Classic, right? But I needed something more, some greens or something to make it a real dinner.
First things first, I got the rice going. I just used my usual method, nothing fancy. While the rice was cooking, I started prepping the beef tips. I seasoned them up with some salt, pepper, a bit of garlic powder – the usual suspects. Then I seared them in a hot pan with a little oil. I like to get a nice crust on them.

Adding Some Greens
Now, here’s where I had to figure out the vegetable situation. I didn’t want anything too complicated. I checked out what I had in the fridge and spotted some broccoli. Perfect! I chopped it up into florets, not too small, not too big.
Once the beef was nicely browned, I took it out of the pan and tossed in the broccoli with a splash of water. I covered the pan to let it steam for a bit. I just wanted it tender-crisp, not mushy.
- Sear the beef tips
- Steam the broccoli
- Combine everything with rice
After a few minutes, the broccoli was looking good, so I added the beef tips back into the pan, just to heat them through and let the flavors mingle a bit. I threw in a little soy sauce for some extra flavor because why not?
When the rice was done, I fluffed it up with a fork. Then it was time to plate it all up. Rice on the bottom, beef tips and broccoli on top. It looked pretty darn good, if I do say so myself. And it tasted even better. The beef was tender, the broccoli was perfectly cooked, and the rice was a great base for everything.
So yeah, that’s how I ended up making beef tips and rice with broccoli. It’s a simple meal, but it really hits the spot. Plus, it’s pretty healthy, which is always a bonus. Next time, maybe I’ll try asparagus or green beans. Who knows? The possibilities are endless!
