Today I really wanted to make a simple lunch, but also wanted to get rid of some leftovers in my fridge. So I just decided to cook up a quick meal with only three main ingredients. It’s super easy, anyone can do it!
First, I grabbed some chicken breast from the fridge. I always try to keep some chicken on hand, it’s just so versatile. I sliced the chicken breast into small, bite-sized pieces. It’s easier to cook and eat this way.

Then, I opened a can of chickpeas. I love chickpeas, they are full of good stuff and they taste great. Plus, they are a great source of protein, perfect for bulking up my meal. I drained the chickpeas and gave them a quick rinse under the tap.
Next, I grabbed a bag of baby spinach. I always make sure to have some greens in my meals. Spinach is great because it cooks down so much, and it’s packed with nutrients. I just tossed a big handful of spinach into the bowl with my chicken and chickpeas.
Then came time for the actual cooking. I heated up a bit of olive oil in a pan on the stove. Once it was hot, I threw in the chicken pieces. I stirred them around until they started to brown up a little. After the chicken cooked a bit, I added the chickpeas and spinach to the pan. I seasoned everything with just salt, nothing else.
I stirred it all together, making sure the spinach wilted down nicely. It only took a few minutes for everything to cook through. The spinach shrinks a lot, so don’t be afraid to add a lot at the beginning. I kept stirring until the chickpeas were heated and the chicken was cooked properly.
The Result
- The chicken was nicely cooked, not dry at all.
- The chickpeas added a nice texture and a good amount of protein.
- The spinach was wilted and blended well with everything.
And that’s it! A super simple saute lunch with just three main ingredients: chicken breast, chickpeas, and spinach. It was surprisingly tasty and very filling. I think I will be making this again soon. It’s a great way to use up leftovers and get a healthy meal on the table quickly. It is perfect for those lazy days, you know. Also, you can change it up with different seasonings or add-ins if you want to get creative, but I liked it just the way it was today.
