Okay, so I saw this recipe online for pumpkin spice cookies with only three ingredients, and I thought, “No way, that can’t be good.” But I was curious, so I decided to give it a try. I love pumpkin spice, and I’m always up for an easy baking project.

Getting Started

First, I gathered my ingredients. The recipe called for a box of spice cake mix, a can of pumpkin puree, and some pumpkin pie spice. That’s it! I already had the cake mix and the spice in my pantry, so I just needed to grab a can of pumpkin from the store.

Mixing It Up

Next, I preheated my oven to 350 degrees Fahrenheit and lined a baking sheet with parchment paper. Then, in a big bowl, I dumped in the cake mix, pumpkin puree, and a couple of teaspoons of pumpkin pie spice. I mixed everything together with a spoon until it was well combined. The batter was pretty thick, not like regular cookie dough.

Baking Time

I scooped out spoonfuls of the dough onto the prepared baking sheet, leaving a little space between each one. I popped them in the oven and set a timer for about 12 minutes. While they were baking, I started thinking about how these cookies would turn out. Could three ingredients really make a good cookie?

The Moment of Truth

When the timer went off, I took the cookies out of the oven. They looked a little puffy and golden brown. I let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Taste Test

Finally, the moment of truth. I took a bite, and I was pleasantly surprised! They were soft and chewy, with a nice pumpkin spice flavor. They weren’t overly sweet, which I liked. Honestly, I couldn’t believe how good they were for being so simple to make.

So, there you have it. Three-ingredient pumpkin spice cookies that are actually delicious. These are perfect for a quick fall treat, or when you’re craving something sweet but don’t want to spend hours in the kitchen. I’m definitely adding these to my regular baking rotation.

  • Tip 1: Don’t overbake them, or they’ll be dry.
  • Tip 2: You can add chocolate chips or nuts to the batter for extra flavor.
  • Tip 3: Store them in an airtight container to keep them fresh.
