Okay, let’s get cooking! Today I’m sharing my experience making Corn O’Brien.

So, I started by gathering all the ingredients. I’m a big fan of using fresh produce when I can, so I got some fresh corn on the cob. You could totally use canned or frozen corn though if that’s what you have on hand. I also grabbed a couple of bell peppers – one green and one red, just to make it look pretty, you know? And of course, some onions, pimentos, butter, salt, and pepper. Pretty basic stuff.

First things first, I husked the corn and cut the kernels off the cob. That can be a little messy, but it’s worth it for that fresh corn flavor. If you’re using canned or frozen, you can skip this step, lucky you! Then I diced up the bell peppers and onions. I like to keep the pieces fairly small, so they cook evenly.

Cooking Time

  • I melted a good chunk of butter in a big pan over medium heat.
  • Once the butter was all bubbly, I threw in the onions and bell peppers and cooked them for a few minutes until they started to soften up.
  • Then I added the pimentos, gave everything a good stir.
  • After that, it was time for the star of the show – the corn! I tossed the corn kernels into the pan and seasoned the whole mixture with salt and pepper.

I cooked everything for about 10 minutes, stirring it now and then, until the corn was tender and everything was heated through. You don’t want to overcook it, or the corn will get mushy.

And that’s it! Super easy, right? The Corn O’Brien turned out great – sweet, savory, and a little bit crunchy. It’s a perfect side dish for almost any meal. I served it with some grilled chicken and a salad, and it was a hit. Definitely give this one a try if you’re looking for a simple and tasty way to use up some corn. It’s a real crowd-pleaser!
