Okay, so today I wanted to mess around with some spiced desserts. Nothing too fancy, just some good old comfort food. I didn’t really have a plan, just a vague idea that I wanted something warm and, well, spicy.
First, I dug through my pantry to see what spices I had on hand. Found some cinnamon, nutmeg, ginger, the usual suspects. Then I remembered my sister, Judith, used to make these amazing Swedish spice cookies when we were kids, so I decided to start there.

I found a recipe online that looked similar to hers and got to work. It was pretty straightforward – mix the dry ingredients, cream the butter and sugar, then combine everything. The dough was a bit crumbly, so I added a splash of milk, and that seemed to do the trick. Rolled it out, used some cookie cutters I found in the back of a drawer, and popped them in the oven.

For the crumble topping, I just threw together some flour, oats, brown sugar, and butter, and mashed it all up with my hands until it was nice and crumbly.
Layered the apples in a baking dish, sprinkled the crumble on top, and into the oven it went. The smell in my kitchen was amazing, all warm and cinnamon-y. It really reminded me of fall and those cozy evenings with a warm drink and a good book.
