Alright, so the other day I was craving some serious comfort food, and what’s more comforting than a big bowl of mac and cheese, right? But not just any mac and cheese, I wanted that creamy, dreamy stuff from California Pizza Kitchen. I remembered that I wrote down the recipe. So, I decided to give it a shot and make it myself.
First, I grabbed all the ingredients. It’s surprisingly simple, you only need four things: pasta, Velveeta cheese, heavy cream, and some shredded cheese. I had some cheddar and Monterey Jack on hand, which I thought would be perfect.

I started by cooking the pasta. I just followed the instructions on the box, nothing fancy. While the pasta was boiling, I moved on to the cheese sauce.
Making the cheese sauce was a breeze. I took a block of Velveeta and chopped it into cubes. Then, I poured some heavy cream into a saucepan and added the Velveeta cubes. I kept the heat on low and stirred it constantly until the cheese melted and the sauce was smooth. It took a bit of patience, but it was worth it.
Once the pasta was cooked, I drained it and added it to the cheese sauce. I gave it a good stir to make sure all the pasta was coated in that creamy goodness. Then, I sprinkled in the shredded cheddar and Monterey Jack cheese and mixed it all together.
The last step was to let it all melt and get nice and bubbly. I popped the whole thing under the broiler for a few minutes, just until the cheese on top was golden brown and gooey.
- It smelled amazing.
- It tasted even better.
- It was so rich and creamy.
- Just like the mac and cheese from California Pizza Kitchen.
The Result:
Honestly, I was pretty proud of myself. It was so easy to make, and it turned out delicious. I’ll definitely be making this again when I need a little comfort food fix.
