Okay, let me tell you about this little kitchen adventure I had the other day. I’m a huge fan of mac and cheese, who isn’t, right? And I’ve always loved the one from California Pizza Kitchen. It’s just so creamy and cheesy, it’s like comfort food heaven. So, I thought, why not try making it myself?

I found a couple of recipes online that claimed to be just like the CPK version. It said “In this article, we’ll be sharing two versions of the California Pizza Kitchen Mac and Cheese recipe”, I was so excited. I decided to go for it, and let me tell you, it was a bit of a rollercoaster.

Getting Started

First off, I gathered all the ingredients. I made sure I had everything: the pasta, the cheeses, milk, and some spices. One recipe mentioned using smoked paprika, which sounded interesting, so I made sure to grab that too.

Cooking the Pasta

Cooking the pasta was pretty straightforward. I boiled some water, tossed in the pasta, and cooked it until it was al dente. Nothing too fancy there, but getting the pasta just right is key, you know? Don’t want it too mushy or too hard.

Making the Cheese Sauce

Now, this was the tricky part – making that super creamy cheese sauce. I started by making a basic white sauce with butter and flour, then slowly added in the milk. The recipe said, “To Keep The Sauce Creamy: Stir in extra milk!” so I was extra careful, constantly stirring to avoid any lumps. It also said, “As the pasta sits, it will release more and more starch and the sauce will thicken. Also, the pasta will absorb the sauce slightly. The easy way to fix this is to simply stir in extra milk and your sauce will return to its original super creamy texture.” I was stirring like crazy, not gonna lie.

Adding the Cheeses

Once the sauce was smooth, it was time to add the cheeses. I used a blend of cheddar, Parmesan, and a bit of mozzarella, just like the recipe suggested. Melting the cheeses into the sauce was so satisfying. Watching it all come together, getting that perfect consistency, it was like magic.

Spice It Up

The recipe also said, “Spices are a great way to accentuate the flavor of the cheese sauce. I typically add salt, freshly ground black pepper, garlic powder, onion powder and smoked paprika to my macaroni and cheese. You could also use regular paprika, cayenne pepper, crushed red pepper, garlic salt, or chili powder.” So, I added the spices. I went with salt, pepper, garlic powder, onion powder, and that smoked paprika. I also saw some other options like cayenne pepper and chili powder, but I stuck to the basics for my first try.

Combining Everything

After the cheese sauce was ready, I mixed it with the cooked pasta. This part was super easy, just making sure every piece of pasta was coated in that delicious sauce. Then, I poured the whole mixture into a baking dish.

Baking Time

One of the articles mentioned preheating the oven, saying, “Step 1 – Preheat oven to 400˚F. Every oven is slightly different so adjust baking time and oven temperature as needed.” Another article just said to remove the box, lol. I preheated the oven to 400°F, as the recipe instructed. I popped the dish in the oven and baked it until it was bubbly and golden brown on top. The smell was incredible, by the way. My whole kitchen smelled like a cheese lover’s dream.

The Final Result

Finally, it was done! I took it out of the oven, let it cool for a bit, and then dug in. And let me tell you, it was pretty darn close to the CPK version! Creamy, cheesy, with a hint of smokiness from the paprika. I was so proud of myself.

It wasn’t perfect, of course. I think I could’ve used a bit more cheese, and maybe next time I’ll experiment with some of those other spices. But for a first attempt, I was really happy with how it turned out. It’s definitely a recipe I’ll be making again. If you’re a mac and cheese fan like me, you’ve gotta try this out. Just be prepared for a bit of trial and error, but trust me, it’s worth it!
