Hey everyone, I’m back again with another food experiment, and this time I tried to make the macaroni and cheese from California Pizza Kitchen. I went to CPK a while ago, and I remember their mac and cheese was pretty decent, so I figured, why not try making it at home? I searched up some recipes online and found some basic ones, and just went with the flow.
First, I gathered all the ingredients I needed. Mostly just a bunch of different cheeses. I got some cheddar, some mozzarella, and even some pepper jack for that little kick. I also grabbed some elbow macaroni, butter, milk, and the usual stuff like salt and pepper. I mean, you gotta have the basics, right?

I started by cooking the macaroni according to the package instructions. While that was going on, I started melting the butter in a separate pot. Once the butter was all melted, I slowly added in the milk, making sure to whisk it all together so it wouldn’t get clumpy. Teamwork makes the dream work, as they say.
Adding in the Cheese
- Then came the fun part – adding in the cheese! I threw in the cheddar first, stirred it until it melted, then added the mozzarella and pepper jack.
- I kept stirring until everything was nice and gooey. Oh boy, it was a sight to see. I added some salt and pepper to taste.
- Once the pasta was done, I drained it and added it to the cheese sauce. I mixed it all together until every piece of macaroni was coated in that cheesy goodness.
Finally, I poured the whole thing into a baking dish and baked it in the oven for a bit, just to get it all bubbly and slightly crispy on top. When it came out, I let it cool for a few minutes, though it was super hard to resist.
And there you have it! My homemade version of California Pizza Kitchen’s macaroni and cheese. It wasn’t exactly like theirs, but hey, it was still pretty darn good. I might play around with the recipe a bit more next time, maybe add some different cheeses or spices. Cooking is all about experimenting, right?
