Today, I felt like making something tasty, and guess what came to mind? That awesome spinach artichoke dip from California Pizza Kitchen. I’ve always loved their small plates, especially this dip. So, I decided to give it a shot and make it myself. Here’s how it went.
First, I gathered all the ingredients. This dip is packed with good stuff like fresh spinach, artichoke hearts, and garlic. And cheese, of course! I’m using not one, not two, but four types of cheese: cream cheese, feta, pepper jack, and Parmesan. This mix makes the dip super melty but also gives it a nice sharp kick.
I started by cooking the fresh spinach. I just sautéed it a bit until it wilted. Then, I chopped up the artichoke hearts and minced the garlic. The smell of garlic always gets me excited for cooking!
Next, I took a big bowl and threw in the cream cheese. I let it soften a bit first so it would mix well. Then, I added the feta, pepper jack, and Parmesan. I stirred them all together until they were nicely combined. It was already looking pretty good, but we’re not done yet.
After that, I mixed in the cooked spinach, chopped artichoke hearts, and minced garlic. I made sure everything was evenly distributed. The dip was starting to look like the real deal.
Now, it was time to bake it. I preheated the oven and poured the mixture into an oven-safe dish. I baked it until it was all bubbly and golden on top. The smell in my kitchen was amazing – cheesy and garlicky goodness.
While it was baking, I thought about what to serve it with. I decided to go with some tortilla chips, pita bread, and a few veggie sticks. You can use crackers too, but I was in the mood for some variety.
Once the dip was out of the oven, I let it cool for a few minutes. Then, I dug in with the chips and veggies. Oh man, it was delicious! Just like at California Pizza Kitchen, maybe even better because I made it myself. A lot of people seem to love this dip, and after making it, I totally get why.
Final Thoughts
Making this spinach artichoke dip was a fun little adventure. It turned out great, and it’s definitely something I’ll make again. If you’re a fan of cheesy, garlicky goodness, you should try making this at home. It’s easier than you think, and so worth it!
