Okay, so I saw this thing online about desserts with lime Jell-O, and I thought, “Why not give it a shot?” It sounded kinda refreshing, and I do love me some lime.
First, I grabbed a box of lime Jell-O from the store. I also picked up some other stuff that I thought might go well with it: a can of pineapple chunks, some Cool Whip (because who doesn’t love Cool Whip?), and a tub of cottage cheese. Yeah, cottage cheese, sounds weird, but I saw it in one of the recipes online, so I figured I’d try it.

Mixing It Up
Back home, I boiled some water and dissolved the Jell-O in it, just like the box said. Then, I drained the pineapple chunks and tossed them into the mix. I dumped in the whole container of cottage cheese. After that, I folded in the Cool Whip until it was all nice and creamy. Oh, and I almost forgot the maraschino cherries! Added some of those in for some color.
I poured the whole concoction into a big glass bowl and stuck it in the fridge. The waiting was the hardest part! It took a few hours to set, and I kept sneaking peeks. I was starting to wonder if the cottage cheese was a mistake. But there was no time to turn back now.
The Verdict
Finally, it was ready. I scooped out a big serving and took a bite. You know what? It wasn’t half bad! The lime Jell-O was tangy, the pineapple added some sweetness, and the Cool Whip made it all fluffy. The cottage cheese, surprisingly, wasn’t that noticeable. It just kinda blended in and gave it a bit of texture. Also, I tried to make it into some individual cups, because I saw some cute trifle online, it turned out pretty good too!
