Okay, so, let’s talk about lobster. I had some leftover lobster from a big family dinner, and I just hate to see good food go to waste. I was thinking, “What can I do with this?” I wanted to come up with something tasty and hopefully a little bit healthy, you know?

So, I started by pulling out all the lobster meat from the shells. It was a bit of work, but totally worth it. I got a good amount of meat, probably about two cups or so. Then, I looked around my kitchen to see what I could use.

I decided to make a lobster salad. I chopped up some celery and red onion – gotta have that crunch! I also added a handful of fresh parsley, ’cause why not? It adds a nice, fresh flavor.

Mix it up

For the dressing, I wanted something light, so I whisked together some Greek yogurt, a squeeze of lemon juice, and a little bit of Dijon mustard. Salt and pepper, of course. I tossed the lobster meat with the veggies and the dressing. Oh boy, it smelled amazing already!

  • Chopped about 2 cups of cooked lobster meat
  • Diced 1/2 cup of celery
  • Diced 1/4 cup of red onion
  • Chopped 1/4 cup of fresh parsley
  • Mixed 1/2 cup of Greek yogurt with 1 tablespoon of lemon juice and 1 teaspoon of Dijon mustard
  • Seasoned with salt and pepper to taste

Serve it up

Now, you can eat this lobster salad in so many ways. I put some on a bed of lettuce for a light lunch. But, you could also use it as a filling for sandwiches or wraps. I even thought about stuffing it into some avocados – that would be super healthy and delicious!

I also experimented a bit and made a warm version. I sautéed some garlic in butter, added the lobster meat and some chopped tomatoes, and cooked it for just a few minutes. I served this over some whole-wheat pasta. It was like a whole new dish!

Conclusion

Honestly, it was so much fun coming up with these recipes. And the best part? I didn’t waste any of that delicious lobster! I felt good about eating healthy, and I got to enjoy lobster for a few more meals. I think next time I have leftover lobster, I might try making a soup or even some lobster cakes. The possibilities are endless!

I had these ideas for a while and finally made it happen, I think it turned out pretty good, I hope you give it a try too.
