Okay, so, I was looking for some easy gluten-free Christmas desserts to make this year, right? I’m not the best baker, but I really wanted to have some festive treats that everyone could enjoy, even my cousin who’s gluten-free. I started by searching for some ideas and found a few recipes that looked promising.
Eggnog Cupcakes
First, I decided to try making Easy Gluten-Free Eggnog Cupcakes with Eggnog Frosting. I mean, who doesn’t love eggnog during the holidays? I gathered all the ingredients, like gluten-free flour, eggs, sugar, and of course, eggnog. I followed the recipe, mixed everything together, and popped them in the oven. The cupcakes turned out pretty good! They were moist and had that nice eggnog flavor. The frosting was a bit tricky, I had to mix eggnog with powdered sugar, it’s a little too sweet for me, but the kids loved them.

Flourless Chocolate Cake
Next up, I wanted to make a Flourless Chocolate Torte. This one seemed a bit more challenging, but I was up for it. It basically involved a lot of chocolate and eggs, which sounded great to me. I melted the chocolate, whipped the eggs, and combined them carefully. I baked it in a springform pan, and it came out looking like a fancy dessert from a restaurant! It was rich, decadent, and definitely a hit with my family. My cousin was so happy that she could enjoy such a delicious chocolate treat.
Christmas Meringue
Lastly, I saw these adorable Festive Meringue Christmas Trees. They looked so cute, and I thought they’d be a fun and easy addition to the dessert table. I found that all I needed was egg whites, sugar, and some green food coloring. I whipped the egg whites until they formed stiff peaks, then gradually added the sugar. I added the food coloring and piped them onto a baking sheet in the shape of Christmas trees. They were a bit tricky to pipe, but I got the hang of it after a few tries. They baked for a while at a low temperature, and they came out looking so festive and pretty! I felt like a real pro.
Rice Pudding
- Also I tried Sticky Toffee Rice Pudding with Caramel Cream, which I thought would be a unique twist.
- It was a bit more time-consuming, as I had to cook the rice, make a toffee sauce, and whip up some caramel cream.
- But let me tell you, it was worth it! The combination of the creamy rice pudding, the sticky toffee, and the caramel cream was just heavenly.
Pavlova
- Then I did a Christmas Pavlova. This was another one that looked a bit intimidating, but it turned out to be surprisingly simple.
- It’s basically a large meringue topped with whipped cream and fruit.
- I made the meringue, baked it until it was crisp on the outside and soft on the inside, and then topped it with whipped cream and some festive red and green fruits.
- It was a showstopper, for sure! And so delicious!
So, yeah, that’s how I made some easy gluten-free Christmas desserts this year. It was a bit of an adventure, but I’m really happy with how everything turned out. And the best part is, everyone loved them, especially my gluten-free cousin! It felt great to be able to make something special that everyone could enjoy. I’m definitely going to try making these again next year, maybe with a few variations. After all, practice makes perfect, right?
