Summer’s here, and it’s time for camping! I always bring my trusty dutch oven with me. It’s like, the best thing for cooking up meals outdoors, whether it is breakfast, lunch, or dinner. This year, I’ve been trying out some new recipes. Let me tell you about them.

Sausage Hash Brown
So, the first one I tried was a real hearty breakfast. It’s got sausage, hash browns, and eggs, all cooked up in the dutch oven. I started by browning some sausage. Once that was done, I took it out and set it aside. Then, I tossed in the hash browns and cooked them until they were nice and crispy. After that, I poured in some beaten eggs and cooked everything together until the eggs were set. I added some cheese on the top for a test. Man, it was a great way to start the day!
Cajun Jambalaya
- 1 pound andouille sausage, sliced
- 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 cup chopped onion
- 1 cup chopped green bell pepper
- 1 cup chopped celery
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon cayenne pepper (optional)
- 1/4 teaspoon black pepper
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (10 ounce) can diced tomatoes and green chilies, undrained
- 3 cups chicken broth
- 1 1/2 cups long-grain rice
- 1/2 cup chopped green onions
Next up was a bit more adventurous – a Cajun Jambalaya. This one was a bit more work, but totally worth it. I browned some sausage and chicken in the dutch oven. I added some chopped onions, green peppers, and celery, cooking them until they were soft. Then, I stirred in some garlic, oregano, thyme, and a little cayenne pepper for a kick. I poured in some diced tomatoes, broth, and rice, then covered the pot and let it simmer. It took a while, but the smell was amazing. Finally, I mixed in some green onions and served it up. It was spicy, flavorful, and perfect for a cool evening.
Mountain Man Breakfast
- 1 pound breakfast sausage
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 1 (30 ounce) package frozen hash brown potatoes
- 12 eggs
- 1 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups shredded cheddar cheese
Last but not least, I tried out something called “Mountain Man Breakfast.” This one’s a real crowd-pleaser, especially if you’re feeding a bunch of hungry campers. You brown some sausage and then add chopped onions and green peppers. Then you layer in a bunch of frozen hash browns. After that, you whisk together a dozen eggs with milk, salt, and pepper, and pour it over everything. Sprinkle some cheese on top, cover it, and let it cook until it’s all set. It’s a cheesy, eggy, potato-y, sausage-y feast!
