Okay, so, St. Patrick’s Day is coming up, and you know what that means – green everything! But for someone who’s not into the whole corned beef and cabbage thing, I wanted to try something different this year. I did some digging and found a bunch of cool vegetarian recipes that seemed right up my alley.
First things first, I needed to gather my ingredients. So, I headed to the grocery store, a bit overwhelmed by all the green beer displays, but I stayed focused. I grabbed some potatoes, because you can’t have St. Patrick’s Day without potatoes, right? Also, I picked up some cabbage, onions, and carrots for a hearty stew I was planning to make. I browsed through the produce section, looking for anything green – spinach, kale, you name it. I even found some green bell peppers and thought, “Why not?”

The Cooking Begins
Back home, I started with the stew. I chopped up the veggies, sautéed the onions until they were nice and golden, and then threw everything into a big pot. I added some vegetable broth, a few bay leaves, and let it simmer away. The smell was amazing, filling my kitchen with this warm, comforting aroma.
While the stew was doing its thing, I moved on to the potatoes. I decided to try making colcannon, which is basically mashed potatoes with greens. I boiled the potatoes until they were soft, then mashed them up with some butter and milk. I sautéed some kale and mixed it into the potatoes. It turned out pretty good, if I do say so myself – creamy, flavorful, and a little bit green!
- Boil potatoes until tender.
- Mash with butter and milk.
- Sauté kale or cabbage.
- Mix greens into mashed potatoes.
- Season and serve.
The Green Spread
I also whipped up a quick green smoothie, just to add some more green to the table. I blended some spinach, banana, and almond milk together. It was surprisingly tasty and a good way to get some extra nutrients.
Finally, for dessert, I found this recipe for Guinness floats. Now, I know Guinness isn’t vegetarian-friendly, so I used a non-alcoholic stout instead. I just scooped some vanilla ice cream into a glass and poured the stout over it. It was a fun and festive way to end the meal.
All in all, my vegetarian St. Patrick’s Day feast was a success! It was a bit of work, but it was totally worth it. Everything tasted great, and it was nice to celebrate the holiday in my own way. Plus, I didn’t have to deal with any weird meat dishes. If you’re looking for some meat-free St. Paddy’s Day ideas, give these recipes a try. You might be surprised at how delicious they are!
Oh, I also made some Irish soda bread. That was easy. Just mixed the ingredients and baked it. It went well with the stew.
So yeah, that’s how I spent my day. Cooking, eating, and enjoying the holiday. It was a good day.
