Okay, so I’ve been seeing these “frozen lemon desserts” all over my feed, and you know I had to try it. Lemons? Frozen? I was curious, so I started this little experiment in my kitchen.
Getting Started
First, I grabbed a bunch of lemons from the store. I think I got, like, six? I wasn’t really following a recipe, just winging it. I also picked up some heavy cream, sweetened condensed milk, and some graham crackers because, why not? A little crust never hurt anybody.

The Lemon Prep
I started by washing the lemons really well. Then, I zested them. This took a while, and honestly, my hand got a little tired. But the smell! So fresh and zesty. After zesting, I juiced all the lemons. My little hand-juicer got a real workout. I ended up with a good amount of lemon juice, probably about a cup and a half.
Mixing It Up
Next, I poured the heavy cream into a big bowl and whipped it until it got nice and fluffy. This is where my trusty stand mixer came in handy. Then, I gently folded in the sweetened condensed milk. It was already looking pretty good at this point. After that, I slowly added the lemon juice and zest, mixing it all in until it was well combined.
The Freezing Part
- I crushed up some graham crackers for a simple crust. I just put them in a bag and smashed them with a rolling pin. Very satisfying.
- I lined a loaf pan with plastic wrap, sprinkled some of the graham cracker crumbs on the bottom, and then poured in the lemon mixture.
- I topped it off with the rest of the graham cracker crumbs and popped it in the freezer.
The Waiting Game
This was the hardest part! I had to wait at least 4 hours, but I think I left it in overnight, just to be sure. Patience is not my strong suit, let me tell you.
The Result
Okay, so the next day, I took it out of the freezer. It looked amazing! I sliced into it, and it was this perfect, creamy, tangy, frozen goodness. The graham cracker crust added a nice little crunch. Honestly, it was so much better than I expected! It was the perfect refreshing treat. I’ll def be using this way of making frozen lemons again.
