Okay, so I’ve been trying to eat a little healthier lately, and for me, that means cutting back on gluten. But I have a HUGE sweet tooth. Like, it’s a problem. So, I decided to dive into the world of “no bake” and “gluten-free” desserts. Let me tell you, it’s been an adventure!
My No-Bake Gluten-Free Journey
First, I scrolled through tons of recipes online. I mean, pages and pages of stuff. I wanted something easy, because, let’s be honest, I’m not exactly a master chef. And “no bake” sounded perfect – less chance of me messing things up, right?

I stumbled upon a few recipes that looked promising, mostly involving things like nuts, dates, coconut, and cocoa powder. These seemed to be the stars of the gluten-free, no-bake world. I made a shopping list (which was surprisingly short!) and headed to the grocery store.
My first attempt? A simple chocolate avocado mousse. Sounds weird, I know, but trust me on this. I blended together:
- Ripe avocados
- Cocoa powder
- Honey (for sweetness)
- A little bit of almond milk
- Vanilla extract
I blended and blended untill get a super smooth and creamy texture.
I poured the mixture into little ramekins and stuck them in the fridge for a few hours to chill. The waiting was the hardest part, seriously! When I finally took them out, I sprinkled some chopped nuts on top for a little crunch.
And… it was GOOD! Like, surprisingly good. The avocado taste was barely there, it mostly just tasted like rich, chocolatey goodness. My kids even liked it, and they’re usually super picky about anything “healthy.”
Since then, I’ve experimented with other recipes. I made some energy balls with dates, oats, peanut butter, and chocolate chips – all no-bake, of course. I even tried a “cheesecake” made with cashews and coconut cream. It wasn’t exactly like real cheesecake, but it was still pretty darn tasty.

So, that’s my no-bake, gluten-free dessert journey so far. It’s been fun, delicious, and way easier than I expected. If you’re looking for a healthier way to satisfy your sweet tooth, I definitely recommend giving it a try!
