Okay, so I’ve been seeing rhubarb everywhere lately, and it got me thinking about all the yummy things you can make with it. And what goes better with rhubarb than raspberries? Nothing, I tell you! So, I decided to dive in and experiment with some rhubarb and raspberry recipes.
My Rhubarb and Raspberry Adventure Begins
First things first, I gathered my ingredients. I picked up some fresh rhubarb from the farmer’s market – nice and firm stalks, you know? Then, I grabbed a big container of plump, juicy raspberries. I also made sure I had the basics: sugar, flour, butter… you get the idea.

Experimenting in the Kitchen
My first thought was a classic: crumble. I chopped the rhubarb into small pieces, tossed it with the raspberries and some sugar, and let it sit for a bit. While that was happening, I whipped up the crumble topping. I like mine with lots of oats and a good amount of brown sugar for that extra crunch and caramel-y flavor. I mixed flour, oats, brown sugar, and cold butter until it resembled coarse crumbs.
Then, I layered the fruit mixture in a baking dish and sprinkled the crumble topping generously over it. Into the oven it went! The smell while it baked was just heavenly – sweet and tart, all at the same time.
I was thinking then i should try another way to make this.
- Firstly. I washed the rhubarb and raspberries thoroughly.
- Secondly.I decided to try a simple compote.
- Then I simmered the rhubarb and raspberries with a bit of sugar and water until everything was soft and jammy.
- Finally. I also added little bit of lemon juice to bring it all together.
The Delicious Results
The crumble was amazing! The fruit was perfectly tart and sweet, and the topping was crispy and buttery. So good with a scoop of vanilla ice cream, and ofcourse the compote turned out great too.
It’s fantastic on toast, stirred into yogurt, or even as a topping for pancakes. I put it into a jar and stored it in my ref.

This whole rhubarb and raspberry thing was a total win. I can’t wait to try even more recipes! Maybe a pie next time? Or muffins? The possibilities are endless!
