Okay, so I saw this recipe floating around for artichoke dip, and it only had three ingredients. I was like, “No way, that can’t be good.” But, you know me, I had to try it. Gotta see if it lives up to the hype, right?
Getting Started
First, I grabbed the stuff I needed. Super simple, just three things:

- A can of artichoke hearts (the kind in water, not oil)
- Some mayonnaise – I used the full-fat kind, because, why not?
- Grated Parmesan cheese
Putting it all together
I drained the artichokes really well. I even squeezed them a bit with a paper towel to get rid of extra water. Nobody wants a watery dip, am I right?
Then, I chopped the artichokes up. Not too fine, I still wanted some texture in there. After that, I threw them in a bowl with a good scoop of mayo. I didn’t measure, just eyeballed it. I added in the Parmesan, too. Again, no measuring, just a generous amount. You know, enough to make it cheesy.
I mixed everything up until it was all combined. It looked a little… plain. But I resisted the urge to add anything else. Three ingredients, that was the challenge!
Baking Time
I spread the mixture into a small baking dish. Then, I popped it into the oven. I baked at * baking, it probably took about 20 minutes, maybe a little longer. I just kept an eye on it until it was all bubbly and golden brown on top.
The Verdict
I pulled it out of the oven and let it cool for a few minutes. Gotta be careful, that stuff is hot! I grabbed some tortilla chips and dug in.
Honestly? It was pretty darn good! I was surprised. It’s creamy, cheesy, and has that nice artichoke flavor. Would I make it again? Yeah, I think I would. It’s super easy, and sometimes you just need a quick and tasty dip. Three ingredients for the win!
