The First Attempt: Total Flop (But a Tasty One!)
My first attempt was a batch of “healthy” cookies. I saw this recipe online that used mashed bananas and applesauce instead of butter. Sounded promising, right? I mixed everything together – bananas, applesauce, oats, some chocolate chips (because, balance), and a pinch of cinnamon. The batter looked… weird. Super wet and sticky. I spooned it onto a baking sheet anyway, hoping for the best.

They baked up… flat. Like, pancake-flat. And they stuck to the baking sheet like glue. I managed to scrape them off, and you know what? They tasted pretty good! Kind of like banana bread in a very, very flat cookie form. Not exactly what I was going for, but hey, edible!
Getting the Hang of It: Muffins to the Rescue!
Next up, I decided to try muffins. I figured the muffin tin would help with the whole “spreading out too much” problem. I found another recipe, this one using vegetable oil instead of butter. I whisked together the oil, some sugar, eggs, and vanilla. Then I folded in the dry ingredients – flour, baking powder, and a touch of salt. I added some blueberries because, why not?
These turned out much better! They were fluffy, moist, and actually looked like muffins. Success! The oil gave them a nice texture, not quite as rich as butter, but still really good.
Experimenting with Other Substitutes
Feeling confident, I started getting more adventurous. I tried using:
- Coconut oil: This worked great in brownies! Gave them a subtle coconut flavor that was actually really nice.
- Avocado: Believe it or not, mashed avocado made for some surprisingly moist and fudgy brownies. You couldn’t even taste the avocado!

The Verdict?
So, after all this experimenting, what have I learned? Baking without butter is totally doable! It might take a little trial and error, and you might not always get the exact same texture as a traditional butter-based recipe, but you can definitely create some delicious treats. It’s been a fun way to mix things up in the kitchen, and I’m definitely going to keep exploring butter-free baking!
