Alright, alright, lemme tell ya somethin’ ’bout this here pumpkin spice cake. They call it a “3 ingredient” cake, which sounds fancy, but it ain’t nothin’ more than dumpin’ a few things together and stickin’ it in the oven. Next up, you need a can of that pumpkin stuff. Not the kind you carve for Halloween, mind you. This here is the canned stuff, all mashed up and smooth like baby food. They call it “pumpkin puree” sometimes, but don’t let them fancy words fool ya. It’s just cooked pumpkin, squished up good. You can find it right there on the shelf with the other canned vegetables, next to the beans and the corn.
- Important! Don’t go gettin’ pumpkin pie filling, ya hear? That stuff’s got all sorts of other things in it, sugar and spices and who knows what else. We just want the plain ol’ pumpkin, nothin’ added.
And last but not least, you gotta have some eggs. Just plain ol’ chicken eggs. Don’t matter if they’re brown or white, big or small. Just crack ’em open and dump ’em in. Now, I know some folks like to get all fancy and separate the yolks and the whites, but we ain’t doin’ none of that here. Just dump ’em in whole, shell and all…just kiddin’! Shells go in the trash.
So, how do you put it all together? Well, it ain’t rocket science, I tell ya. You just dump that cake mix into a big bowl, add the pumpkin, and crack in them eggs. Then you stir it all up real good, until it’s all mixed together and there ain’t no dry spots left. You can use a spoon, a fork, or even your hands if you ain’t too squeamish. Just make sure you get it all mixed up good.
Once it’s all mixed, you gotta pour it into a pan. Now, you can use a fancy cake pan if you got one, but a regular ol’ baking dish works just fine too. Just grease it up a little so the cake don’t stick, and pour that batter right in. Spread it out even, so it cooks all the way through.

Then you stick it in the oven. Now, I ain’t gonna tell ya exactly how long to cook it for, ’cause every oven is different. But you wanna cook it until it’s golden brown on top and a toothpick stuck in the middle comes out clean. Just keep an eye on it, and don’t let it burn. Burnt cake ain’t no good to nobody.
Once it’s done, you gotta let it cool down a bit before you frost it. Now, you can use whatever kind of frosting you like, or you can just eat it plain. It’s good either way, I tell ya. This here pumpkin spice cake ain’t nothin’ fancy, but it’s good and it’s easy. And sometimes, that’s all that matters.
