Alright, so I wanted to share my latest adventure – figuring out some desserts to bring camping. You know, something sweet to enjoy under the stars after a day of hiking and exploring. I’m no expert baker, but I’m always up for a good challenge in the kitchen, and this time, it was all about finding treats that are easy to transport and don’t require a lot of fuss once you’re at the campsite.
First off, I started brainstorming. What do I love when I’m out in nature? Obviously, s’mores came to mind, but I wanted to try something a bit different too. I thought, “What can I make ahead of time and won’t get crushed in my backpack?”

I started flipping through some old cookbooks and browsing online, and that’s when I got the idea for trail mix cookies. They’re packed with oats, nuts, seeds, and chocolate chips, basically all the good stuff you’d find in trail mix, but in cookie form. Sounded perfect! I found a simple recipe online, added a bit extra chocolate, and baked a batch. The whole kitchen smelled amazing. I used the baking pan and put the baking paper. After that, I tasted one… or maybe three, just to make sure they were good, of course. They were chewy, a little bit crunchy, and just sweet enough.

- Mix and bake the cookies according to the recipe.
- Let them cool down.
Next, I remembered those no-bake energy bites I’d seen floating around. They seemed like a great option – no oven needed, and you can throw them together in minutes. I grabbed some peanut butter, honey, oats, and some mini chocolate chips. I combined them, rolled the mixture into little balls, and popped them in the fridge to firm up. Easy peasy! And they tasted pretty darn good too, if I do say so myself.

Packing It Up
Now, the real test – packing. I put the cookies in a sturdy container, making sure they wouldn’t get squished. The energy bites went into a separate container. I also packed the classic s’mores ingredients: graham crackers, marshmallows, and some good quality chocolate bars. I figured, even if I had these other treats, you can’t go camping without s’mores!
Out in the wilderness, these desserts were a hit. Sitting around the campfire, munching on those trail mix cookies and energy bites, it felt like a little piece of home. And of course, roasting marshmallows and making s’mores was the perfect way to end the day.
So, that’s my little dessert adventure. It wasn’t anything fancy, but it sure made our camping trip a bit sweeter. If you’re heading out into the great outdoors anytime soon, give these treats a try. They’re easy to make, easy to pack, and even easier to enjoy!
