OK, so, seafood, right? I’ve always been a fan. But let’s be honest, cooking it at home can be a bit of a pain. Overcooked, undercooked, rubbery, dry… you name it, I’ve messed it up. That’s where the Instant Pot comes in. I figured, why not give it a shot? I mean, it’s supposed to make everything easier, right?
So, I started digging around for some recipes. Nothing too crazy, just wanted to see what this thing could do. Found a few that looked pretty simple. Shrimp, scallops, some fish fillets, nothing too out there. The cool thing was, most of these recipes promised super quick cooking times. Like, we’re talking 5 minutes for shrimp and scallops. Fish, a little longer, but still way faster than traditional methods.

My First Try: Shrimp Scampi
First up, I decided to try a shrimp scampi. I mean, who doesn’t love shrimp scampi? Tossed some shrimp in the Instant Pot with some garlic, butter, white wine, the usual suspects. Set it for, like, 3 minutes, I think? Maybe 4? I don’t remember the exact time. But when I opened that lid… wow. The smell alone was amazing. And the shrimp? Perfectly cooked. Tender, juicy, not a rubber band in sight.
Next Up: Scallops
Feeling a little more confident, I moved on to scallops. These things can be tricky, even in a pan. But the Instant Pot? Nailed it. Again, a super short cooking time, and they came out perfect. Seared on the outside, tender on the inside. I just added some butter. I was seriously impressed.
Fish Fillets
Last but not least, I gave fish fillets a try. Now, I’ve had my fair share of dry, overcooked fish. But the Instant Pot kept the fillets nice and moist. I did have to adjust the cooking time a bit, depending on the thickness of the fillets. Like the thicker one, I had to cook them for longer time. But, it was still way faster than baking or pan-frying.
Here are some of the recipes I tried:
- Shrimp Scampi: Just shrimp, garlic, butter, white wine, lemon juice.
- Garlic Butter Scallops: Scallops, garlic, butter, and a little bit of seasoning.
- Simple Fish Fillets: Fish fillets with some salt, pepper, and a squeeze of lemon.
Honestly, the Instant Pot has totally changed my seafood game. It’s so much easier and faster, and the results are consistently good. I’m not saying I’m a seafood master chef now, but I’m definitely not afraid to cook it at home anymore. It is really simple and delicious. I have to say that I will cook the seafood with my instant pot more often. It saves me a lot of time and trouble. I don’t have to watch over it. So, I think I will keep exploring more recipes that I can cook with my instant pot.
