Alright, so last night I made a meatloaf, a big one. And guess what? There were tons of leftovers! I mean, what do you do with so much leftover meatloaf? Throwing it away was definitely not an option. So, I thought, why not turn it into a casserole? I rolled up my sleeves and got to work, and let me tell you, it turned out pretty awesome.
First things first, I grabbed all the leftover meatloaf from the fridge. I crumbled it into smaller pieces, makes it easier to work with. Then, I remembered reading somewhere that milk helps keep the meatloaf juicy. So, I poured in some milk. Not too much, just enough to moisten the meat. I also added an egg, which I whisked in a separate bowl first. I learned that eggs help bind everything together and keep the meatloaf from drying out. Oh, and for a bit of a kick, I squirted in some Dijon mustard. I love the flavor it adds.

Making the Casserole

Next, I preheated my oven to 250 degrees Fahrenheit. While that was heating up, I greased a casserole dish. No one likes their food sticking to the dish, right?

I then spread the meatloaf mixture evenly in the dish. I wanted to give it a little extra something, so I sprinkled some shredded cheese on top. You can never go wrong with cheese, am I right?

I popped the dish into the oven and let it bake for about 20-25 minutes. I kept an eye on it to make sure the cheese melted nicely and the casserole was heated through.
The Result
And there you have it! A delicious, hearty casserole made from leftover meatloaf. It was so good; my family didn’t even realize it was made from leftovers. It’s amazing how you can transform something old into something new and exciting. Plus, it’s a great way to make sure no food goes to waste. I think next time, I’ll even make extra meatloaf on purpose just so I can make this casserole again!
I also thought, why stop at a casserole? There are tons of other ways to use up leftover meatloaf. I could chop it up and toss it into a salad. Or maybe even slice it thin and make meatloaf sandwiches. The possibilities are endless. Leftover meatloaf? No problem. It’s just another opportunity to get creative in the kitchen!
