Okay, so today I wanted to try something new in the kitchen, and I thought, why not Scandinavian cookies? I’ve always been fascinated by Scandinavian baking, and I figured it was high time I gave it a shot. I did a little digging online and found a few recipes that looked promising.
Getting Started
First things first, I gathered all the ingredients. The recipes I found were pretty straightforward, calling for simple stuff like flour, butter, sugar, eggs, and some spices. Nothing too crazy, thankfully. I made sure I had everything on hand before I started, because there’s nothing worse than getting halfway through a recipe and realizing you’re missing something.

Mixing it Up
With my ingredients all set, I started mixing. I creamed together the butter and sugar until it was nice and fluffy. Then, I added the eggs one at a time, mixing well after each addition. In a separate bowl, I whisked together the dry ingredients – flour, baking powder, and the spices. Gradually, I added the dry ingredients to the wet ingredients, mixing until just combined. It’s important not to overmix, or the cookies will be tough.
Shaping the Cookies
Now came the fun part – shaping the cookies! One of the recipes I found was for these cute little almond shells called Mandelmusslan. I decided to go with that one, and let me tell you, they were a bit fiddly to make, but so worth it! I rolled out the dough and used a small cookie cutter to cut out the shapes. Then, I carefully pressed each shape into a mini muffin tin to create the shell shape. I also tried out a simpler recipe, for traditional Scandinavian butter cookies. For these, I just rolled the dough into small balls and flattened them slightly before baking.
Baking Time
Into the oven they went! I baked them for about 10-12 minutes, until they were golden brown around the edges. The smell wafting through my kitchen was absolutely heavenly. I could hardly wait to try them!
The Taste Test
Once they were cool enough to handle, I took a bite. Oh. My. Goodness. These cookies were amazingly delicious! The Mandelmusslan were delicate and almondy, with a satisfying crunch. They’re also addictive, once you start eating them, it’s difficult to stop. The butter cookies were rich and buttery, with just the right amount of sweetness. I was so proud of myself for pulling these off! It is not hard to make, and I enjoyed it.
Final Thoughts
- Worth the effort: Even though the Mandelmusslan were a bit time-consuming, they were totally worth it.
- Simple yet delicious: Both recipes were surprisingly simple, but the results were outstanding.
- Will bake again: I’ll definitely be making these cookies again. They’re perfect for a special occasion, or just a cozy afternoon treat.
All in all, my Scandinavian cookie adventure was a huge success. I learned a lot, had fun in the process, and ended up with some seriously tasty treats. If you’re looking for a fun and rewarding baking project, I highly recommend giving these recipes a try. You won’t be disappointed!
