Alright, so today I’m gonna share my little adventure in making… well, let’s just call it a “leftover extravaganza.” You know, that kind of dish your grandma used to whip up – the one where you just toss in everything that’s been hanging out in the fridge a little too long.
First things first, I raided the fridge. I mean, really raided it. I’m talking half an onion, a couple of sad-looking carrots, some celery that was starting to get a bit soft, and about a cup of leftover roasted chicken. Oh, and a lonely, forgotten potato. Don’t forget the broccolli that I thought was a good idea to buy a few days ago.

Then, I chopped everything up. Not fancy, mind you. Just rough, bite-sized pieces. The kind where you don’t have to chew too much. Honestly, who has time for that?
Next, I grabbed a big pot. Gotta have a vessel for this watery masterpiece, right? I tossed in a little bit of olive oil (the cheap stuff, let’s be real), and sauteed the onion and celery until they started to get a little translucent. That’s when I added the carrots and potato. Gave it all a good stir and let it cook for another five minutes or so.
After that, I dumped in the chicken and covered everything with chicken broth. You could use water, but why would you when you have broth? Adds a little somethin’ somethin’. Then I brought it to a boil, then lowered the heat and let it simmer for about 20 minutes, or until the potatoes were nice and soft. After that I threw in the broccolli. Simmer for another 5 minutes.
While that was simmering, I made a slurry of cornstarch and water. You know, to thicken things up a bit. Poured that into the pot and stirred it around until it reached the consistency I was looking for. Not too thick, not too thin – just right.
Finally, I seasoned it with salt, pepper, and a little bit of garlic powder. Tasted it, adjusted the seasonings, and… voila! A watery dish made from many ingredients, usually leftovers. AKA, a culinary adventure born of fridge cleaning.
Served it up in a big bowl, with a side of crusty bread for dipping. Not gonna lie, it wasn’t gourmet, but it was warm, filling, and used up all those leftovers. Plus, it saved me a trip to the grocery store. Win-win!
