Okay, folks, let’s dive into my little kitchen adventure today – making California Pizza Kitchen’s Chicken Piccata. I’ve always loved this dish at CPK, so I figured, why not try making it at home?
Getting Started
First, I gathered all my ingredients. I already had some chicken breasts, lemons, and capers. I needed to buy the basic such as pasta, butter,and some fresh parsley.

Prepping the Chicken
I took the chicken breasts and pounded them thin. I just put them between some plastic wrap and used a meat mallet (a rolling pin works,too!). This helps them cook evenly and quickly. Then, I seasoned them with just salt and pepper – simple is best.
Making the Sauce
This is where the magic happens.I use a large skillet, and then I melted some butter over medium-high * it was all melted and bubbly,I put some flour into skillet, keep stirring it, then I added the chicken breasts and cooked them for a few minutes on each side until they were golden brown. I took them out of the pan and set them aside.
Next, in the same pan, I added some more butter and some garlic.I just cook garlic about 30 *,I pour chicken broth and lemon juice,and keep stirring.I bring it boil, and I added the capers. I let it all simmer for a bit until the sauce thickened up slightly.
Cooking the Pasta
- While the sauce was simmering, I cooked the pasta.I choose spaghetti, boil a pot of water,and put some salt.
- I cooked pasta according to the package.
- I drain the pasta.
Bringing It All Together
Once the pasta was cooked, I added it to the pan with the sauce and tossed it all together. Then, I nestled the chicken breasts back into the pan, spooning some of the sauce over them. I sprinkled some chopped fresh parsley over the top for a bit of freshness and color.
The Final Result
And there you have it! My homemade version of CPK’s Chicken Piccata. It might not be exactly the same as the restaurant version, but it was pretty darn close, and it definitely satisfied my craving. Plus, it was way cheaper than going out!
