Okay, so I’ve been craving some good old mac and cheese lately, and not just any mac and cheese, but the one from California Pizza Kitchen. I mean, who can resist that creamy, cheesy goodness? So, I decided to take matters into my own hands and try to make it myself.
I searched online for some recipes, and it looked pretty straightforward. I thought, “Hey, I can do this!” I mean it’s just pasta, cheese, and some other stuff, right? I’m no chef, but how hard could it be? I gathered all the ingredients I needed, feeling all excited like a kid in a candy store. I started by getting a big pot and filling it with water, because, you know, you gotta boil the pasta first. I threw in a pound of elbow macaroni, the classic mac and cheese shape.

While the pasta was cooking, I got started on the cheese sauce. I melted a stick of butter in a saucepan – oh yeah, butter makes everything better. Then, I sprinkled in some flour, just a bit, and whisked it all together. It got all thick and pasty, which I guess is what’s supposed to happen. I slowly poured in some milk, whisking like crazy to avoid any lumps.
- Boil the pasta: I cooked the elbow macaroni according to the package instructions.
- Make the cheese sauce: I melted butter, whisked in flour, then gradually added milk and brought it to a simmer.
- Combine and bake: I mixed the cooked pasta with the cheese sauce, poured it into a baking dish, topped it with more cheese, and baked it until bubbly.
Then came the important part – the cheese! I added a bunch of shredded cheese to the sauce, letting it melt and get all gooey. I tasted it, and oh boy, it was already tasting pretty darn good. I drained the pasta and mixed it with the cheese sauce. It was looking like the real deal, and my kitchen smelled amazing. I wanted that golden-brown crusty top, so I decided to bake it for a little while. Into the oven it went, and I waited, trying to be patient.
The timer finally went off, and I pulled out the mac and cheese. It was bubbly, golden, and looked absolutely delicious. I let it cool down a bit, then dug in. It was pretty close to the CPK version, I gotta say!
The Final Result
It wasn’t exactly the same, but it was pretty close. The cheese sauce was creamy and rich, and the pasta was cooked just right. The baked crust on top was a nice touch. I might try a different blend of cheeses next time, maybe add some more spices to see how it comes out. I was pretty proud of myself, honestly. I might even try making this for my friends sometime. They won’t believe I made it myself! Overall, a pretty successful experiment, if I do say so myself.
