Alright, let me tell you about my little adventure in the kitchen recently. I got this bug in my head about trying out some different kinds of sweets, something a bit unusual, you know? Called them my ‘new world desserts’ project in my head, mostly because I was mixing things up, trying combinations I hadn’t done before.

Getting Ready

First thing, I had to figure out what I was actually going to make. Spent a bit of time just scrolling, looking for ideas that seemed interesting but not ridiculously complicated. I’m no pro chef, mind you. I settled on trying two things: one was a sort of spiced pineapple bake, and the other was a chocolate avocado mousse. Yeah, avocado in dessert – told you I was trying new stuff!

Shopping for ingredients was mostly straightforward. Had the usual stuff like flour, sugar, chocolate. Finding good, ripe avocados was key for the mousse. The pineapple thing needed some specific spices I didn’t have, like cardamom and star anise. Had to hunt those down, but found them eventually at a bigger store.

  • Pineapple
  • Flour, Sugar, Butter
  • Spices: Cardamom, Star Anise, Cinnamon
  • Good quality dark chocolate
  • Ripe Avocados
  • Cocoa powder
  • A little maple syrup

Got everything back home, spread it out on the counter. Felt kinda good, like I was actually ready to do this.

The Making Process

Started with the pineapple bake because it seemed easier. Chopped up the pineapple, mixed it with the spices, sugar, and a bit of butter. The smell of the cardamom and anise was pretty strong, almost strange, but kinda nice too. Made a simple crumble topping, popped it in the oven. So far, so good.

Then came the avocado mousse. This felt weirder. Scooped the avocado into the blender, added melted dark chocolate, cocoa powder, and a splash of maple syrup. Whizzing it up, the colour turned this deep, rich brown. Looked like regular chocolate mousse, but I knew its secret. The texture was the big question mark. Would it be smooth? Would it taste… green?

Had a little mishap blending – forgot the lid wasn’t fully on. Just for a second! Little specks of chocolate-avocado mix decorated the wall. Nothing major, cleaned it up quick. Part of the fun, right? Poured the mousse into some small glasses and put them in the fridge to set.

The Results

Okay, tasting time. The pineapple bake came out of the oven smelling amazing. The spices had mellowed a bit, mixing with the sweet pineapple. It was warm, comforting, and the crumble top was nice and crisp. Definitely different, but really tasty. Success!

Now, the mousse. I was nervous. Took a spoonful. It was… surprisingly good! Really smooth, rich, and chocolatey. You couldn’t taste the avocado at all, honestly. It just gave it this incredible creaminess. My wife tried it without me telling her what was in it. She loved it! When I revealed the secret ingredient, she was pretty shocked, but went back for more.

So, this whole ‘new world desserts’ experiment? Turned out pretty well. It was fun messing around with ingredients I don’t normally use for sweets. The spiced pineapple was a nice twist on a fruit bake, and the avocado mousse was a total surprise hit. Definitely pushed me out of my comfort zone a little, which is always good. Might even make that mousse again.
