Alright, so you wanna know about this Velveeta cheese, huh? Well, let me tell ya, I ain’t no fancy scientist or nothin’, but I can tell ya what I know. You see, they put all sorts of stuff in that there cheese, not like the good ol’ days when cheese was just, well, cheese.

Then comes the “whey.” I heard tell that’s the watery stuff left over after they make cheese. Seems like they’re usin’ every bit of the cow, ain’t they? And not just whey, but “whey protein concentrate” and sometimes even “whey protein isolate.” Sounds like they’re squeezin’ every last drop of somethin’ outta that whey. They add a bunch of other things too, like “sodium phosphate.” I ain’t got a clue what that is, but it sounds like somethin’ they use to clean the barn, ha!
- They also use “calcium phosphate.” Maybe that’s for your bones or somethin’.
- And “lactic acid,” sounds kinda sour, don’t it? Maybe that’s what gives it that tang.
- Then there’s “sorbic acid,” that’s probably to keep it from goin’ bad, you know, like a preservative.
They put in “sodium citrate” and “sodium alginate” too. More of them science-y words. I reckon it’s to make it all smooth and creamy-like. And “enzymes,” well, I know them enzymes are in your stomach and stuff, help you digest your food. Maybe they put ’em in the cheese to make it easier to eat, or maybe it helps make the cheese, I don’t rightly know.
And then there’s the colors! “Apocarotenal” and “annatto.” Sounds like somethin’ you’d find in a paint store, not in your food. But I guess they gotta make it look pretty, all that yellow-orange color, gotta make it look like real cheese, you know. Sometimes they even say “cheese culture,” but who knows what that really means anymore. They probably just sprinkle a little dust in there and call it cheese culture.
Kraft, yeah, that’s the company that makes this stuff. They say it’s “pasteurized process cheese product.” See, they don’t even call it plain ol’ cheese. It’s a “product.” That tells ya somethin’ right there. And somebody said it ain’t got no eggs in it, which I guess is good if you don’t like eggs. And it sure ain’t vegan, not with all that milk and stuff.

So, what’s it all mean? Well, it means they take a bunch of stuff, mix it all up, and make somethin’ that looks and tastes kinda like cheese, but ain’t really cheese. It’s good for meltin’ though, makes a nice grilled cheese or mac and cheese. My grandkids love it. But is it healthy? Well, I ain’t no doctor, but I reckon it ain’t the worst thing you can eat, but it ain’t the best neither. It’s got a lot of stuff in it that your grandma wouldn’t recognize, that’s for sure.
People use this Velveeta cheese in all sorts of dishes. You know, like that macaroni and cheese, the grilled cheese sandwiches, and sometimes even in dips and stuff. It melts real nice and easy, that’s why folks like it. But remember, it’s got a lot of stuff in it, not just plain old cheese. So, you eat it if you want, but don’t go thinkin’ it’s the same as what your grandma used to make.
And they use canola oil too! Canola oil, I tell ya, it’s in everything these days. I don’t know if it’s good or bad, but they sure do use a lot of it. And “modified food starch.” Modified? What’d they do to it? Make it grow bigger? Make it taste better? I guess we’ll never know. And maltodextrin? Another one of them long words. Probably just sugar, they like to sneak sugar into everything. And salt, of course, gotta have salt. Everything tastes better with a little salt.
So there you have it. That’s the lowdown on what’s in Velveeta cheese, as best as I can figure it. It ain’t rocket science, but it ain’t just plain cheese neither. It’s somethin’ in between, a product of this modern world, I guess.
