When I finally opened the slow cooker, man, the smell was amazing! The chicken was super tender, and the lemon and herbs gave it a really fresh flavor. I served it with some steamed broccoli, and it was a hit. Even my non-diabetic family members loved it.
Other Recipes I Tried
- Balsamic Glazed Chicken: This one was a bit fancier. I used balsamic vinegar, honey, and some Dijon mustard to make a glaze. I cooked the chicken in the slow cooker first, then I took it out, brushed it with the glaze, and broiled it for a few minutes to get it nice and caramelized.
