Okay, so I saw this recipe online for artichoke dip, and it only needed three ingredients. I was like, “No way, that can’t be good,” but I was also super curious. So, I decided to give it a try.
Getting Started
First, I grabbed the stuff I needed:

- One can of artichoke hearts (I got the one packed in water, not oil)
- Some mayonnaise (I used the full-fat kind, because, why not?)
- Parmesan cheese (I just bought a block and grated it myself)
Mixing it Up
I drained the artichoke hearts really well, then chopped them up pretty fine. I didn’t want huge chunks in my dip. Then, I dumped them into a bowl.
Next, I scooped in a big dollop of mayonnaise. I didn’t really measure, just eyeballed it. I probably used about half a cup, maybe a bit more. I added the grated Parmesan cheese to. Again, I didn’t measure, Just a good, healthy amount. You can make a decision for yourself.
Then, I mixed everything together until it was all combined. It looked a little…thick. I don’t know, I was still skeptical.
Baking Time
I spread the mixture into a small baking dish. I think it was an 8×8 inch one? I had to choose it. It was a little hard to pick just one! Then, I popped it into the oven, which I had already preheated to 350 degrees Fahrenheit.
I baked it for about 20 minutes. I just kept an eye on it until it was all bubbly and golden brown on top.
The Taste Test
Okay, I pulled it out of the oven and let it cool for a few minutes (this was the hardest part!). Then, I grabbed some tortilla chips and dug in.
And…wow. Seriously, I was shocked. It was actually really good! Creamy, cheesy, and the artichokes had a nice flavor. It wasn’t bland at all. I honestly couldn’t believe it was just three ingredients.

I ended up eating way more than I planned. It was that good. So, yeah, I’m definitely making this again. Super easy, super tasty – a total win.
