I was messing around in the kitchen today, and decided to try something new with cauliflower and eggplant. You know, it’s always fun to experiment a little bit. I had some cauliflower and eggplant lying around, and figured, why not combine them?
Got the ingredients
So, I grabbed the cauliflower and eggplant, and gave them a good wash. Then, I chopped up the cauliflower into smaller pieces, you know, the usual florets. For the eggplant, I sliced it into rounds. Nothing fancy, just some simple chopping.

Cooking process
Now, I know some people boil their cauliflower, but I read somewhere that you lose a bunch of nutrients that way. So, I decided to steam the cauliflower instead. I put the florets in my steamer basket and let them steam until they were tender. Took about 10 minutes, maybe?
While the cauliflower was steaming, I heated up some oil in a pan. Once it was hot, I threw in the eggplant slices. I cooked them until they were golden brown and soft. Oh, and I sprinkled some salt and pepper on them, just to give them a little flavor.
Combining them
After the cauliflower and eggplant were both cooked, I tossed them together in a big bowl. It looked pretty colorful, I gotta say. I added a bit of this and that. You know, those recipes online talked about making some fancy curry or a pie, but I just wanted something simple.

The result
Honestly, it turned out pretty good! The cauliflower was nice and tender, and the eggplant had a great texture. It was a simple dish, but sometimes those are the best, right? I think next time, I might add some other veggies, like zucchini or bell peppers, just to mix things up. I’m thinking to try them out next week.
