Okay, so I’ve been on this huge health kick lately, trying to eat more salads and generally just be better to my body. But, let’s be real, salads can get boring real fast without a killer dressing. I stumbled upon this recipe for a Carrot Express Cilantro Lime Dressing, and figured I’d give it a shot.
First things first, I gathered my ingredients. I already had some stuff, but I had to make a quick trip to the store for a few things.
My Shopping & Gathering List:
- Fresh Cilantro:I grabbed a big bunch of fresh cilantro.
- Limes:I bought some limes, the juicier, the better!
- Garlic:I got some garlic. Fresh is always best, in my humble opinion.
- Jalapeño:I picked up a jalapeño. I like a little kick, but you can totally skip this if you’re not into spice.
- Olive Oil:I use Extra virgin olive oil, because that’s what I saw online.
- Apple Cider Vinegar:I got a bottle of apple cider vinegar, which added more flavor.
- Honey:I use honey for a touch of sweetness.
- Salt and Pepper:And salt and freshly ground black pepper, to taste.
Next up, prep time.I washed the cilantro really, really well. Nobody wants sandy dressing. I chopped up the cilantro – not too fine, I like a little texture. Then, I juiced those limes. I find it easiest to roll them on the counter first to get the juices flowing.
The garlic… oh, the garlic. I minced a couple of cloves. If you’re a garlic fiend like me, maybe add an extra clove. For the jalapeño, I removed the seeds and membrane (that’s where most of the heat is) and then finely diced it. Remember, you can always add more later, so start small if you’re unsure.
Now for the fun part! I threw everything into my blender – the cilantro, lime juice, minced garlic, diced jalapeño, olive oil, apple cider vinegar, honey, salt, and pepper.
I blended it all up until it was nice and smooth. You might need to stop and scrape down the sides of the blender a couple of times to make sure everything gets incorporated.
Finally, I gave it a taste. This is crucial! You might need to adjust the seasonings. Maybe it needs a little more lime juice for tang, a touch more honey for sweetness, or a pinch more salt. It’s all about your personal preference.
And that’s it! Seriously, it’s that easy. I poured the dressing into a jar and it’s good to keep in the fridge. Now I’ve got a delicious, healthy dressing ready to go for my salads all week. And honestly, it’s so good, I could probably eat it with a spoon!
