Okay, so I’ve been seeing all these cute Easter desserts on the internet, and I just had to try making some myself. I’m not a pro baker or anything, but I figured, how hard could it be? I’m aiming for some gluten-free options because my sister has celiac disease, and I want her to enjoy these treats too.
Getting Started
First things first, I went and grabbed all the ingredients. I made a list, which, let me tell you, was a lifesaver. I decided to make three different desserts: bunny-shaped cookies, a carrot cake, and some mini egg nests.

Bunny Cookies
For the bunny cookies, I looked up a simple gluten-free sugar cookie recipe. I got some gluten-free flour, sugar, butter, eggs, and vanilla extract. I mixed all the dry stuff first, you know, the flour and sugar. Then, I creamed the butter and sugar together until it was all fluffy. I added the eggs and vanilla to that, and slowly mixed in the dry ingredients. The dough was a bit sticky, but I wrapped it in plastic wrap and chilled it in the fridge for about an hour.
After chilling, I rolled out the dough and used a bunny-shaped cookie cutter to make the cookies. I baked them for about 10 minutes, just until the edges started to brown. They smelled amazing! Once they cooled, I decorated them with some simple icing. I just mixed powdered sugar with a bit of milk and food coloring. I made some pink, blue, and yellow icing, and drew little faces and details on the bunnies. They turned out so cute!
Carrot Cake
Next up, the carrot cake. I’ve made regular carrot cake before, but this was my first time making a gluten-free one. I found a recipe that used almond flour and coconut flour, which sounded interesting. I grated a bunch of carrots, like, a LOT of carrots. Then, I mixed the dry ingredients: almond flour, coconut flour, baking soda, cinnamon, and some other spices.
In another bowl, I mixed the wet ingredients: eggs, oil, maple syrup, and vanilla extract. Then, I combined the wet and dry ingredients, and folded in the grated carrots. I poured the batter into a greased cake pan and baked it for about 40 minutes. The smell of cinnamon and carrots filled my kitchen, it was heavenly.
While the cake was baking, I made the cream cheese frosting. I just beat some cream cheese with butter, powdered sugar, and a splash of vanilla. Once the cake cooled completely, I frosted it and decorated the top with some chopped walnuts. It looked so pretty and tasted even better!
Mini Egg Nests
Last but not least, the mini egg nests. These were the easiest to make. I melted some chocolate and mixed it with some shredded wheat cereal. I spooned the mixture into little mounds on a baking sheet lined with parchment paper, making a little indent in the center of each one to create the nest shape.
Then, I placed a few mini chocolate eggs in each nest. I popped them in the fridge to set for about 30 minutes. They were so simple, but they looked really impressive and tasted delicious.
