It is time to start working on this baking project! I’ve been craving something sweet, and with the weather getting cooler, I figured it would be fun to try out some gluten-free fall desserts. So let’s get this show on the road!

First things first, I needed to figure out what I wanted to make. I did a quick search and found a ton of recipes, but a few caught my eye: Grain-Free Pumpkin Pie Bars sounded amazing, and the idea of a Frozen Pumpkin Dessert was tempting, too. So I decided to go with these two. What is fall without pumpkins?

Easy Gluten Free Desserts for Fall: The Only Recipes You Need

For the pumpkin pie bars, I gathered all the ingredients. I noticed that the recipe called for almond flour instead of regular flour, which I thought was pretty cool. After mixing everything, I put it in the oven and waited. You know how it is with baking, just hoping it turns out right.

  • Mix dry ingredients: almond flour, spices, baking soda, salt
  • Whisk wet ingredients: pumpkin puree, eggs, maple syrup, vanilla
  • Combine wet and dry, then pour into a baking dish
  • Bake until set, then let cool completely

While the bars were baking, I started on the frozen pumpkin dessert. This one seemed a bit easier. It called for pumpkin puree, some spices, and a few other things. I blended everything, and it looked just like melted ice cream. I poured the mixture into a container and popped it in the freezer. It was a bit of a waiting game, but I was pretty excited to see how it would turn out.

Finally, after what felt like forever, the pumpkin pie bars were ready. I took them out of the oven, and they smelled amazing! After they cooled down, I cut them into squares. They were so good! The texture was a bit different from regular pie bars, but the flavor was spot on. Definitely a win!

Taste-Testing Time

Next up, the frozen pumpkin dessert. I took it out of the freezer and scooped some into a bowl. It was like a healthier version of pumpkin ice cream. It is not Ben & Jerry’s, but I was happy with it. I even found a recipe to make rice pudding with leftover rice. Although it was not pumpkin-flavored, it was a nice addition.

I spent the rest of the afternoon enjoying my gluten-free treats and watching my favorite show. All in all, it was a successful baking day. Can’t wait to try out more recipes. Maybe I will look into some gluten-free cookies next time. Or perhaps something with apples since it is fall, after all.

This was such a fun little project. Baking always makes me feel better, and trying out these gluten-free recipes was a nice change. If you are looking for some fall dessert ideas, give these a try. You might be surprised at how good gluten-free can be!
