I’m talkin’ about the real deal, the kind of food that fills ya up and warms the soul. So, I’m gonna tell ya a little bit about some of the dishes they love up there in Quebec, and how ya can make ’em at home. Y’all ready? Well, let’s get started then!

Now, I gotta start with poutine. Oh, you ain’t never tasted nothin’ like it, I promise you. Poutine is the pride and joy of Quebec, and it’s got a funny name too, but don’t let that fool ya. It’s simple, but oh-so-delicious. All you need is a good batch of French fries, some cheese curds (the fresher the better), and a rich gravy to pour all over it. You just pile them fries high, throw on them curds, and smother it all with that gravy. That’s it. It’s comfort food at its best! The warm gravy melts the cheese curds, and you got yourself a tasty mess that’ll fill ya up like nobody’s business.

Now, if you’re makin’ this at home, you just fry up them potatoes until they’re golden and crispy. Then, you take some beef or chicken stock, throw in some flour, and stir until you got yourself a nice, thick gravy. Pour that all over them fries and curds, and you’re good to go! You can also try throwin’ some extra toppings on there like pulled pork, but that’s up to ya. I prefer it simple, but hey, you do you.

Tourtire

Next up, we got tourtire. Oh, my heavens, this one’s a hearty dish, let me tell ya. It’s a meat pie, and it’s usually made with minced beef or pork. They season it all up real nice with some herbs and spices, then wrap it in a flaky pie crust. They bake it ‘til it’s golden brown and crisp. It’s the kinda thing you eat when the snow’s fallin’ outside, and ya just want somethin’ warm to fill ya up.

Now, if ya want to make it at home, you’ll need a good pie crust. You can buy one from the store if ya lazy like me, or you can make your own if you’re feelin’ fancy. Once it’s cooked through, just stuff that meat into your pie crust and bake it ‘til it’s golden. Trust me, it’s worth the effort!

Oh, and let’s not forget about them salted herbs. Quebecers use these in all kinds of dishes, and it gives everything a unique, savory flavor. You’ll find these herbs in things like vegetable soup, pea soup, and even mashed potatoes. It’s a simple trick, but it works wonders! They just take fresh herbs—usually thyme, rosemary, or sage—and they salt ‘em up real good. Then, they toss ‘em in whatever they’re cookin’ to give it that extra somethin’. You won’t find this in no other cuisine, that’s for sure.

Now, if ya want to try it at home, all ya gotta do is get some fresh herbs. I like thyme myself, but rosemary and sage work too. Chop ‘em up real fine, and then sprinkle a little salt on ‘em. Let it sit for a few hours, and it’s ready to go. You can add it to any soup or stew you make, or just sprinkle it on your mashed potatoes. It’ll make your food taste like it’s been cookin’ all day, even if you just threw it together in an hour!

It’s sweet and sticky, just the way you’d want a dessert to be!

And don’t get me started on them tourtières (meat pies) that come with a side of baked beans. You ain’t never seen a more filling meal. You’ll be sittin’ there with a belly full of good food, and you won’t even care if the snow’s still comin’ down outside. Quebec food just has a way of making everything feel cozy and right.
