Okay, so, I’ve been thinking about St. Patrick’s Day, right? And what’s the first thing that pops into your head? Green stuff! So, I was like, why not make some green desserts? I mean, how hard could it be?
I started flipping through some recipes, and man, there’s a lot of green stuff out there. But I wanted something that was more on the natural side, you know, not like, glowing in the dark green. After some digging, I got some ideas in mind. One was this No-Bake Avocado Lime Cheesecake. Sounds a bit weird, but hey, avocados are green, and they’re pretty healthy, so why not? I grabbed some avocados, some limes, and a bunch of other stuff I didn’t even know the names of. Then I started mixing, and honestly, it was a bit of a mess. I was mashing avocados, trying to keep them from turning brown, and squeezing those limes like there was no tomorrow.

After that, I gave the Avocado Coconut Milk Ice-Cream a try. It was easier than the cheesecake, I just blended everything together. I added some coconut milk to make it creamy, and a bit of sweetener, and popped it in the freezer.

While those were setting, I thought I’d try something a bit more traditional. Green Irish Soda Bread seemed like a good idea. It’s simple, you know? Just flour, baking soda, buttermilk, and some food coloring. But here’s the thing, I tried to make it a bit fancy by adding some raisins, and let me tell you, it was not a good idea. The bread turned out a bit too sweet, and the green color made the raisins look, well, let’s just say it wasn’t pretty.
Next up, Matcha Cranberry Scones. I’ve always liked matcha, that green tea powder, so I thought this would be a sure win. I mixed the matcha with the flour, added some cranberries for a bit of tartness, and baked them. They turned out pretty good, actually. The green color was subtle, and the taste was spot on.
Finally, I went for something a bit more basic, Almond Flour Sugar Cookies. I figured, you can’t go wrong with cookies, right? I used almond flour to make them a bit healthier, added some green food coloring, and shaped them into little shamrocks. They were a hit! They looked cute, tasted good, and they were green. What more could you ask for?
Some Real Talk
All in all, it was a fun experience. Some recipes were a hit, some were a miss, but hey, that’s how it goes in the kitchen, right? You win some, you lose some. But it’s all about having fun and trying new things. And I gotta say, these green desserts did add a bit of fun to my St. Patrick’s Day celebration. Give it a try, maybe you’ll like it!
