Okay, so I’ve been trying to eat healthier lately, and salads are my go-to. But let’s be real, plain lettuce gets boring fast. I needed a good dressing, and I remembered this amazing cilantro lime dressing from Carrot Express. I decided to try and make it myself.
First, I grabbed my phone and looked up “Carrot Express cilantro lime dressing ingredients”. I found some recipes online, and I picked one that looked simple enough. The ingredients sounded pretty basic.
My Shopping List
- Fresh cilantro – and lots of it!
- Limes – I grabbed a bunch, just in case.
- Garlic – because everything’s better with garlic.
- Some kind of oil – I went with olive oil.
- Jalapeno – for a little kick.
- Salt and pepper
I got all my ingredients together. I washed the cilantro really well (that stuff can be sandy!). Then, I juiced a few limes. I love the smell of fresh lime juice.
I chopped up the cilantro, minced the garlic, and diced the jalapeno (remember to wash your hands after that!).
Next, I threw everything into my blender – cilantro, lime juice, garlic, jalapeno, olive oil, and a pinch of salt and pepper.
Then, I just blended everything up until it was nice and * took a try and tasted it… and it was… okay. It needed something.
I added a little more lime juice, and another pinch of salt. Blended it again, and tested.
It was definitely getting a little better each time.
I added some more ingredients.
I did this a few time and it’s finally perfect!
Finally, I poured the dressing over my salad and… success! It tasted really close to the Carrot Express version, maybe even better because it was so fresh. It was tangy, zesty, and had just the right amount of heat. I’m definitely making this again!
