Alright, so the other day I was craving something fresh and crunchy, and I remembered this awesome slaw I had at Zoe’s Kitchen a while back. I thought, “Why not try to make it myself?” So, I rolled up my sleeves and got to work.
First, I gathered all the stuff I needed. Luckily, I had most of it at home already. I grabbed a bag of that pre-shredded angel hair slaw mix ’cause who has time to shred a whole cabbage? Then I chopped up about half a cup of green onions – they add a nice little bite. For the cheesy goodness, I crumbled up about two-thirds of a cup of feta. Oh, and I made sure I had some white wine vinegar, fresh lemon juice, and some extra virgin olive oil.

Getting Started:
- I dumped the slaw mix into a big bowl.
- Then, I tossed in the chopped green onions and the crumbled feta. I mixed it all up gently with my hands – gotta get in there, you know?
Making the Dressing:
- In a separate small bowl, I whisked together three tablespoons of white wine vinegar, three tablespoons of fresh lemon juice, and three tablespoons of olive oil. I just eyeballed it, really.
- I poured the dressing over the slaw mix and tossed everything together until it was all nicely coated.
The Taste Test:
I took a big forkful, and man, it was pretty darn close to the Zoe’s Kitchen version! It was crunchy, tangy, and the feta added that perfect salty kick. I did notice that the original has some other spices in it. I mean, it is not a big deal, it just has a different flavor from what I did. Next time I need to look for it.
Tweaks and Variations:
I was thinking, you could totally customize this. Like, maybe add some shredded broccoli or zucchini for extra crunch. Or, if you’re feeling adventurous, some chopped jicama or even Brussels sprouts could be interesting. I’ve heard that coleslaw has some ancient Roman roots – they used to eat it with cabbage, eggs, vinegar, and spices.
