Okay, so I’ve been wanting to eat healthier lately, but I’m no chef, you know? I do have a KitchenAid mixer, though, and I figured it’s time to put that bad boy to good use beyond just making cookies. Here’s how I made some surprisingly good healthy meals using it.

Experiment 1: Smoothie Power

First up, smoothies. I used to just throw stuff in a blender, but the KitchenAid mixer has this awesome blender attachment. I started by tossing in some frozen berries, a banana, a handful of spinach (don’t judge, you can’t even taste it!), and some almond milk. I whizzed it all up, and man, it was way smoother than my old blender ever made. Plus, cleanup was a breeze because all the parts are dishwasher safe. Easy peasy.

Experiment 2: Veggie Noodles

Next, I tried making zucchini noodles. I got the spiralizer attachment for my mixer, which is honestly pretty cool. I washed a couple of zucchinis, trimmed the ends, and stuck them on the spiralizer. In like, two minutes, I had a mountain of zoodles. I sautéed them with a little garlic and olive oil, and it was a surprisingly good, low-carb pasta alternative. Who knew?

Experiment 3: Homemade Hummus

I’m a big hummus fan, but store-bought can be pricey. So, I decided to make my own. I used the food processor attachment this time. I drained and rinsed a can of chickpeas, added some tahini, lemon juice, garlic, and a pinch of salt. I processed it until it was super smooth, drizzled some olive oil on top, and sprinkled some paprika. Honestly, it was better than any hummus I’ve ever bought. And way cheaper, too!

Experiment 4: Cauliflower Rice

Last but not least, I attempted cauliflower rice. I’ve heard people rave about it, but I was skeptical. I broke a head of cauliflower into florets and pulsed them in the food processor until they resembled rice. It took a bit of trial and error to get the right consistency, but I got there. I sautéed it with some onions and other veggies, and it was a pretty decent rice substitute. Not exactly the same, but healthy and filling, so that’s a win.

So, there you have it. My little journey into healthy eating with my KitchenAid mixer. It’s been fun, and I’ve definitely expanded my cooking skills a little. Plus, I’m eating better, which is always a good thing. Maybe this will inspire you to dust off your mixer and give some healthy recipes a shot!
