Okay, so, I’ve been trying to cook more at home, right? And I love soup, but the problem is, most recipes make a huge batch. I live with my partner, and it’s just the two of us. We end up eating the same soup for days, or worse, throwing a bunch away. It’s such a waste!
So, I went on a mission to find some soup recipes that are perfect for just two people. No more endless leftovers!

My Soup-Making Journey
First, I tried halving some of my go-to recipes. I grabbed a few carrots and potatoes, started chopping them. But that was a bit of a mess. Sometimes it worked, sometimes the flavors were just off. It’s not as simple as just dividing everything by two, you know?
Then, I started looking specifically for “soup for two” recipes online. I typed “soup for two” into the search bar, and browsed some results. I found a few that looked promising. There’s this one for a tomato soup that looked super simple. The recipe said, “1 cup: 259 calories, 12g fat (7g saturated fat), 44mg cholesterol,” but I didn’t care much about those numbers. I just wanted a tasty, small batch of tomato soup!
I followed the instructions, dicing some tomatoes, sauteing them with some herbs. Poured in some broth, simmered it for a bit. It smelled amazing, filling our small kitchen with this warm, comforting aroma. And guess what? It was the perfect amount for two bowls. We finished it all in one sitting, no leftovers!
Then, I got a little bolder. I found a recipe for a cauliflower and broccoli cheese soup. Now, I love cheese. So does my partner. So, I picked up some cauliflower and broccoli from the local store, boiled it. The recipe also mentioned something like “bring the soup to a boil and stir until thickened, between…”. I cooked some cheddar in the mix, and oh boy, it was creamy and delicious. It was another perfect two-serving recipe. I was starting to feel like a soup-making pro!
Later that week, I tried an Italian sausage orzo soup. I bought some sausage and mushrooms, and of course, some orzo pasta. Browned the sausage, tossed in the mushrooms and orzo, added some broth, and let it simmer. Again, it made just enough for the two of us. It was hearty and flavorful, perfect for a chilly evening. The recipe says, “1/4 pound bulk Italian sausage; 1/2 cup sliced fresh mushroom,” which was just the right amount.
Finally, I made a sausage and spinach tortellini soup. Now I bought some cheese tortellini. I browned the sausage, added some spinach and tortellini, broth, the usual. The recipe says, “Sausage tortellini soup epitomizes comfort food, featuring cheese-stuffed t…” It’s another comforting, cheesy soup. And it turned out fantastic. The tortellini was nice and plump, the spinach added a nice touch of green, and the sausage gave it a nice kick.
