Alright, so I’ve been trying to cut down on sugar lately, but man, I have such a sweet tooth! Strawberries are in season, and I just had to make something delicious and healthy with them. I figured, why not try my hand at some sugar-free strawberry desserts?

First things first, I grabbed a bunch of fresh, ripe strawberries from the local market. You know, the ones that are bright red and smell amazing? Yeah, those. I washed them really well and sliced them up. The natural sweetness of these berries is already pretty awesome, so I figured they’d be perfect for a sugar-free treat.

Experimenting with Sugar-Free Sweetness

  • I decided to make a simple strawberry shortcake. But without sugar? This is the challenge! Instead of regular sugar, I used some erythritol, which is a sugar alcohol that doesn’t spike your blood sugar.
  • For the shortcake part, I whipped up a batter using almond flour, a bit of coconut flour, eggs, and erythritol. I also added a little bit of vanilla extract and a pinch of salt. The batter smelled pretty good, even without the sugar.
  • I spooned the batter into some muffin tins and baked them until they were golden brown. It took about 20 minutes, and my kitchen started smelling like a bakery.

Putting It All Together

While the shortcakes were cooling, I whipped up some heavy cream with a bit of erythritol and vanilla extract. I know, I know, heavy cream isn’t exactly “diet food,” but hey, it’s sugar-free, and a little bit won’t hurt, right?

Once the shortcakes were cool enough to handle, I sliced them in half, layered on some of that delicious whipped cream, and then piled on the fresh strawberries. I added another dollop of whipped cream on top and, just for good measure, stuck a whole strawberry on there. It looked so pretty!

The Verdict

Okay, so how did it taste? Honestly, it was way better than I expected. The shortcakes were a bit denser than regular ones, but they were still fluffy and had a nice, subtle sweetness. The whipped cream was light and airy, and the strawberries, of course, were the star of the show. Their natural sweetness really shone through, and the erythritol didn’t have any weird aftertaste. It was actually good. I will try it again next week.
