First thing’s first, you gotta get yourself some squirrels. Now, I ain’t gonna tell ya how to do that. That’s your business. But once you got ’em, you gotta clean ’em good. Skin ’em, gut ’em, and wash ’em real well. Nobody wants no hairy, dirty squirrel meat. That’s just common sense, ain’t it?

Okay, so you got your squirrels all cleaned up. Now, some folks like to boil ’em first, get ’em tender. I heard tell of folks power boilin’ them squirrels ‘til they tender, you know, fork goes right in. Then they pick all the meat off the bones. That’s one way to do it, sure enough. They take that meat, toss it in a bag with some flour and pepper, shake it up, and then fry it in a pan ‘til it’s nice and brown. Sounds good, right?
But me? I like to keep it simple. I just throw them squirrels right in the crock pot. Why make more work for yourself, I say? I ain’t got all day to be fussin’ in the kitchen. I got things to do, people to see. You know how it is.
So, here’s what you do. You take them cleaned squirrels and put ’em in the bottom of the crock pot. Then, you gotta add some veggies. I like to use potatoes, carrots, and onions. Chop ’em up, not too small, not too big, just right. You know, bite-sized pieces. And if you got some green bell pepper, throw that in too. Adds a nice little sweetness. Oh, and don’t forget the cabbage. Chop that up too, and toss it in. Makes it hearty, you see.

Now, you gotta add some liquid. Water works just fine. Just enough to cover everything. Don’t drown them squirrels, though. Just enough to keep ’em moist. And then, you gotta season it up. Salt, pepper, garlic powder, onion powder, whatever you like. Don’t be shy with it, now. Squirrel meat can take a good bit of seasoning. I like to add a little bit of paprika too, gives it a nice color.
Okay, so you got everything in the crock pot. Now, put the lid on and turn it on low. And then, you just let it cook. Low and slow, that’s the secret. All day long, if you can. At least six to eight hours. The longer it cooks, the more tender them squirrels will be. And that’s what you want, tender squirrel meat that just melts in your mouth.
After a while, you’ll start to smell it. That delicious aroma will fill your whole house. And your mouth will start watering. And you’ll know it’s almost ready. When the squirrels are fork-tender, and the veggies are soft, it’s time to eat. Just scoop it out onto a plate and enjoy. Maybe with some cornbread or biscuits on the side. Now that’s a good meal, I tell ya.
Some folks like to add other things to their crock pot squirrel. Some folks put in tomatoes, some folks put in mushrooms. Some folks even put in a can of cream of mushroom soup. Now, I ain’t never tried that, but I reckon it would be good. You can experiment, you know. That’s the fun of cooking. Make it your own. But the basic recipe is always the same. Squirrels, veggies, water, and seasonings. That’s all you need.

So, there you have it. My simple crock pot squirrel recipe. It ain’t fancy, but it’s good. And it’s easy. And it’ll fill your belly and warm your soul.
