Let’s Bake This Dang Pie Mix

Alright folks, found this dusty can of Libby’s Pumpkin Pie Mix hiding behind some beans in my pantry. Figured why not? Need something sweet without the fancy footwork.

  • The Libby’s mix (duh)
  • Those two eggs left in the carton
  • Evaporated milk from the back shelf
  • My trusty pre-made pie crust from the freezer (no shame!)

First, cranked the oven up. Needed 425°F according to the can. Easy enough. My oven always runs hot though, so I set it to 415°F hoping for the best. Pre-heat button smashed.

Next, dumped the mix into my biggest mixing bowl. Looked thick! Cracked those two eggs right in there. One shell almost fell in – grabbed it quick. Poured in the whole can of evaporated milk. Used my ugly yellow whisk thing and just went for it. Whisked and whisked until my arm kinda complained. Saw some lumps but thought “Eh, good enough.”

Got my frozen pie crust out. Thawed it on the counter earlier, but the edges still felt a bit stiff. Didn’t care. Poured that pumpkin goop right into the crust. Spilled a tiny bit over the edge. Wiped it off quick with a paper towel.

Shoved the pie into the hot oven. Smelled promising! Lowered the heat to 350°F after 15 minutes like the can said. Timer set. Went about my business.

Checked it halfway. Crust edges were looking real dark brown. Fast! Panic mode. Grabbed my little foil scraps, ripped ’em into strips, covered the crust edges loosely. Center was STILL runny. Kept baking.

Felt like forever. Jiggled the pie pan. Center wobbled like jello but didn’t slosh. Pulled it out. Crust under the foil? Still pretty dark, almost burnt. Center looked kinda firm.

Let it sit for hours on the stovetop. Gave up around dinner time and sliced it. It held its shape! Barely. Looked rustic, sure. Tasted decent! Sweet, pumpkin-y, classic. Burnt crust edges? Just kinda scraped ’em off with my fork.

Bottom line? Libby’s mix works. Got dessert with zero fancy skills. My freezer crust? Saved my bacon. Overbaked edges? My oven’s fault, not Libby’s! Tastes like pumpkin pie should. Done and dusted.
