Okay, so I’ve been wanting to try out some Moroccan food for a while now, and I finally got around to it! I decided to go all in and make a vegetarian tagine. I’m not gonna lie, I was a little nervous at first, but it turned out to be way easier than I thought.
First off, I went to the grocery store and gathered all the ingredients. I got some carrots, zucchini, potatoes, onions, garlic, and a bunch of spices like cumin, coriander, turmeric, and ginger. Oh, and I also grabbed some chickpeas and dried apricots, because I saw those in a recipe online.

- Spices: Loads of cumin, coriander, turmeric, and ginger. Smelled like heaven already!
- Veggies: Carrots, zucchini, potatoes – the usual suspects.
- Extras: Chickpeas and dried apricots for that authentic touch.
Next, I started chopping up all the veggies. I cut the carrots and potatoes into chunks, sliced the zucchini, and diced the onions and garlic. It was kind of therapeutic, actually. I felt like a real chef!
Then, I heated up some olive oil in a big pot and tossed in the onions and garlic. Once they were softened, I added all the spices and let them cook for a minute or two. Let me tell you, the smell was amazing! It filled up my whole kitchen.
After that, I threw in the rest of the veggies, along with the chickpeas, apricots, and some vegetable broth. I brought everything to a boil, then lowered the heat and let it simmer for about 45 minutes, or until the veggies were tender.
While the tagine was simmering, I cooked up some couscous to go with it. Couscous is super easy to make, by the way. You just boil some water, pour it over the couscous, cover it, and let it sit for a few minutes. Fluff it up with a fork, and you’re good to go.
Finally, it was time to eat! I served the tagine over the couscous and garnished it with some fresh cilantro. And let me tell you, it was delicious! The veggies were tender, the spices were flavorful, and the chickpeas and apricots added a nice touch of sweetness. I was really proud of myself for making such a tasty and healthy meal.

This Moroccan tagine experiment was a total win! Super easy, even for a kitchen newbie like me. The flavors were amazing, and it felt good to eat something so healthy. Definitely making this again!
