This India food, my goodness, it’s something else! I heard folks talkin’ ’bout it, sayin’ it’s real good. So, I thought I’d give it a try, you know, learn to cook Indian cuisine. It ain’t like our regular food, that’s for sure. Lots of spices and things I ain’t never even heard of before. But, hey, gotta learn new things sometime, right?
First thing I learned, they got this stuff called curry. Now, that ain’t like the curry powder we got in the store. It’s a whole bunch of things mixed together. Makes the food taste all different and special. They put it in everything, almost. That’s what my neighbor told me. She’s been watchin’ them cooking shows. Then they use this cooker. It’s slow, but it makes the food tender, she said. I wonder if she knows how to cook Indian food at all.

They got this bread, too. Ain’t like our cornbread, though. It’s flat, like a pancake, kinda. They call it Naan or Roti, I reckon. I saw it on the TV. Looks kinda hard to make, but I bet it’s tasty with all that curry stuff on it. Gotta find a good pan for that, I guess. Maybe I should ask my neighbor for some advice. After all, she’s the one who told me all this Indian cuisine stuff.

They eat a lot of rice, too. Just like us! But they put all sorts of things in it. Vegetables, meat, that curry stuff. Makes it look real pretty, all colorful and such. I saw a picture in one of them magazines. Looked real good. I bet it would be a good meal. They use this pot that cooks the rice and meat all together, kinda like a stew. She said it’s basic Indian cooking. I think that’s pretty easy.
And they got this drink, kinda like a milkshake, but it ain’t. They call it a Lassi. Made with yogurt, I think. And fruit. Mango, maybe? I ain’t never had a mango. Sounds kinda fancy, don’t it? But I bet it’s good. They drink it with their spicy food, I hear. Helps cool down your mouth, I reckon. It sounds refreshing. They must know how to cook delicious Indian dishes. Otherwise, why would they eat it?
This other thing I learned, they got these things called spices. Lots and lots of ’em. More than I ever seen. They grind ’em up and put ’em in their food. Makes it smell real good, I bet. And taste different, too. Not like our food. We mostly just use salt and pepper. But they got all these other things. Turmeric, cumin, coriander. Sounds like a foreign language, don’t it? They even cook something with beef. That’s strange, isn’t it? I thought beef was not allowed in Indian cuisine and food.

They got so many different dishes, too. More than I can count. Some with meat, some with vegetables. Some with that flatbread, some with rice. All kinds of things. I saw a picture of one, it was called Butter Chicken. Looked real creamy and good. And they had another one, called Beef Curry. That sounds kinda like something we’d eat, don’t it? Except with all them spices, I bet it tastes way different. I guess that’s what makes it a restaurant favorite.
They got this other dish, called Dosa. It’s like a big, thin pancake. They put potatoes and onions and things in it. And they eat it with this stuff called chutney. It’s made with coconut, I think. And some other things. Sounds kinda strange, but I bet it’s good. They eat it with this other stuff called Sambar, too. It’s like a soup, kinda. Made with vegetables and lentils, I think. I bet if I keep learning, I’ll be able to cook Indian food soon.
Now, I ain’t sayin’ I’m gonna start cookin’ all this Indian food all the time. But it’s good to learn new things, right? Keeps your mind sharp, they say. And who knows, maybe I’ll even like it. Might even surprise the family with a big Indian feast one of these days. Wouldn’t that be somethin’? I’d have to learn how to say all them fancy names, though. That might be the hardest part!

This Indian cuisine, it sure is different. But different ain’t always bad, right? Might be kinda fun to try somethin’ new. Just gotta get used to all them spices. And figure out how to make that flatbread. And that Lassi drink. And all them other things. It’s a lot to learn, that’s for sure. But I reckon I can do it. Just gotta put my mind to it. And maybe watch a few more of them cookin’ shows. That’s how you learn to cook, right?
Well, I reckon that’s all I got to say about that for now. Gotta go see if I can find some of them spices at the store. And maybe a mango. Who knows, maybe this old dog can learn some new tricks after all. It will take time. But one day, I’ll be able to cook delicious Indian dishes.
